  • These are my favorite muffins. I usually add blueberries and pecans.
  • Almond Flour Muffins
  • 3 cups of almond flour
  • 1-teaspoon baking soda
  • 1-teaspoon baking powder
  • 1/4-teaspoon salt
  • 1 cup Splenda
  • 1/2 cup of yogurt (can sub sour cream + 1 tsp. vinegar if you don’t have yogurt)
  • 3 eggs
  • 1-tablespoon vanilla
  • 1/4 cup melted butter (if necessary)
  • Fruit or nuts of choice
  • Mix ingredients together, if batter is too thick add butter as needed to thin to muffin consistency. Add nuts or fruit if desired.
  • Put batter in paper lined muffin tins and bake 325° for 20 minutes or until toothpick inserted in muffin comes out clean.

  • Chocolate Almond Joy Bars
  • 4 eggs
  • 3/4 cup coconut milk (canned)
  • 2 teaspoons almond extract
  • 3/4 cup palm sugar
  • 1/2 cup blanched almond flour
  • 1/2 cup coconut flour
  • 1/4 teaspoon celtic sea salt
  • 1/2 teaspoon baking soda
  • 1/4 cups unsweetened shredded coconut
  • 3/4 cup dark chocolate chips
  • 1 .In a large bowl, whisk together eggs, coconut milk, almond extract and palm sugar
  • 2 .In a smaller bowl, combine almond flour, coconut flour, salt and baking soda
  • 3 .Mix dry ingredients into wet with a handheld mixer
  • 4 .Stir in 1/2 cup of the chocolate chips
  • 5 .Grease an 8-inch by 8-inch baking dish
  • 6 .Pour batter into dish, then sprinkle shredded coconut and remaining chocolate chips on top
  • 7 .Bake at 350° for 30 minutes
  • 8 .Cool for 1 hour
  • 9 .Serve

  • o.k. this is what I did:
  • 2 2 2 cups Almond Flour
  • 2 2 2 tsp baking powder
  • 1 1 1 tsp baking soda
  • 1 1 1 tsp glocomannon
  • 1/2 1/2 1/2 tsp salt
  • 8 8oz 8oz cream cheese
  • 1/2 1/2 1/2 cup butter
  • 1/2 1/2 1/2 cup mayo
  • 1 1 1 cup E
  • 1 1 1 Cup Liquid splenda
  • pinch pinch of Nunaturals stevia powder
  • 2 2 2 jumbo eggs
  • 2 2 2 tsp Vanilla
  • 4 4 4 Tbs E
  • 1/1 1/1/2 1/1/2 tsp cinnamon
  • 5 followed directions for the high carb one. Oh yeah, I added 5 drops sweetzfree because I thought it needed just a tad more sweetner.

  • In case anyone runs out of poultry seasoning today, here's a copy cat recipe.
  • I use this recipe all the time.
  • It tastes exactly like Bell's Poultry Seasoning.
  • BELL'S POULTRY SEASONING - copy cat recipe
  • 4 1/2 tsp dried rosemary
  • 4 tsp dried oregano
  • 3 3/4 tsp dried sage
  • 3 1/2 tsp ground dried ginger
  • 3 tsp dried marjoram
  • 2 3/4 tsp dried thyme
  • 3/4 tsp ground black pepper
  • Mix together and grind to fine powder in a coffee or spice grinder.
  • Makes about 1/2-cup.

  • AUNT MARY'S CREAMED CHICKEN
  • 1 large frying chicken -- cut in pieces
  • 1 small onion -- cut in wedges
  • 1 cup heavy cream
  • 1/2 pound button mushrooms -- halved{my addition}
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • -Wash the fryer then cut into pieces, pat dry.
  • -In a large oven proof skillet heat about 2 T. olive oil;add chicken pieces & brown well on all sides.
  • -Season with salt & pepper.
  • -Remove chicken to a plate; add onions & mushrooms to skillet & brown slightly.
  • -Add chicken back to the skillet, pour on cream, cover & place in a 350 degree oven for about 30 minutes.
  • -Remove cover & return to oven for another 20 minutes.
  • **-Make sure the cream is not cooking down too fast..check every few minutes .If it is cooking down too lower the oven temp to 300 degrees during last 20 minutes.or until almost all the cream has cooked away. You still want to have some cream sauce.
  • -Serve the chicken with the sauce & mushrooms & onions spooned over top.
  • -Serve with a side salad & a low carb vegetable.
  • -Each serving:6.3 carbs minus 1.4 grams dietary fiber = 4.9 carbs

  • This was a Paula Dean recipe that I have revamped to fit Low carb
  • Bacon-Wrapped Green Bean Bundles
  • 4 (15-oz.) cans of whole green beans ~ not “cut”, not “french-style”
  • bacon strips, cut in half (I use my kitchen scissors.)
  • 1 cup melted butter
  • 1 cup sugar equivalent
  • 1/2 tsp. garlic salt
  • 1 tsp. soy sauce
  • 1 tsp molasses (opt)
  • Gather 10 beans into a bundle. Wrap bacon around beans and secure with a toothpick. Arrange in a 9×13 pan.
  • Combine melted butter, sugar, garlic salt, and soy sauce, molasses if used, in a bowl. Mix well. Pour over beans.
  • Chill overnight or for several hours. Bake at 375° for 45 minutes – 1 hour, or until bacon is cooked

  • Pecan Crusted Mahi Mahi
  • 1 1 1 pound Mahi Mahi (Easily cut into four servings)
  • 3/4 3/4 3/4 cup chopped Pecans
  • 2 2 2 Tbsp Coconut Flour (Carbquick will work too)
  • 2 2 2 Tbsp Half n Half
  • 1 1 1 Egg, beaten
  • 2 2 2 Tbsp Brown Diabetisweet
  • 1/8 1/8 1/8 tsp Cayenne Pepper
  • Mix of Olive Oil and Sesame Oil, or Olive Oil and butter
  • Gently peel off the Mahi Mahi skin. It should all peel right off. Slice the Mahi into four equal sized portions. Rinse and pat dry.
  • Pulverize or finely chop pecans in mini prep. Add brown Diabetisweet, Coconut flour and Cayenne, salt and pepper. Set aside.
  • 4 on each side for about 4 minutes.
  • to was absolutely to die for. I am NOT a big fish fan, at all....but this was so mild, sweet with a hint of "kick", it was a hit.
  • If you're a Trader Joe's fan, stop by and pick up some of their fresh Mango Salsa...OMG, the bomb. Naturally low in carb, and a couple tablespoons on each filet would be delish.

  • Rub roast with salt, pepper and garlic powder.
  • Place meat in shallow roasting pan, fat side up.
  • 5 for 5 minutes per pound for rare;

  • Turn oven off at the end of the cooking time and DO NOT OPEN THE OVEN DOOR FOR TWO HOURS.

  • Easy Cinnamon Rolls
  • Ingredients
  • 2 Tbs. Splenda
  • 2 1/4 cups of LC Pancake mix
  • 1 teaspoon ground cinnamon
  • 2/3 cup LC milk or cream
  • 2 Tbs. Splenda
  • 2 Tbs. softened butter
  • Cinnamon to sprinkle
  • 1/4 cup chopped pecans
  • Heat oven to 375. Grease bottom of 9 x 13 pan.
  • Stir pancake mix and 2 Tbs. Splenda in a medium bowl. Add cream or milk slowly until soft dough forms..(not sticky). Sprinkle a bit of Pancake mix
  • or Splenda on the counter and turn dough onto surface and knead several times. Then shape into a ball and roll out into a rectangle 15 x 9.
  • Spread surface with softened butter. Sprinkle Splenda over, then sprinkle
  • pecans over. Roll up tightly beginning at the 15 inch side..Seal well by
  • pinching edge of dough into roll. Cut into 1 1/4 inch slices. Place cut side
  • down in pan.
  • Bake 20-23 minutes until golden on top. Let cool..
  • Glaze or spread with favorite topping after they are cooled.
  • I just ballpark butter, powdered erythritol, bit of softened cream cheese, and
  • liquid Splenda.. Spread over rolls..
