- 3 pounds Boneless Pork Shoulder or Leg (butterflied and pounded to yield 1 large piece 1/2-inch thick and 12 inches square)
- Kosher Salt and freshly ground Black Pepper
- 1/2 cup finely chopped Italian Parsley plus 2 tablespoons
- 1/4 cup Pine Nuts (baked for 8 minutes in a 400F oven) plus more to garnish
- 1/2 cup Dried Currants plus more to garnish
- 3/4 cup freshly grated young Pecorino Cheese
- 16 slices Prosciutto di Parma (about 1/2 pound)
- 4 Hard Boiled Eggs (peeled and quartered lengthwise)
- several gratings of Nutmeg
- 4 tablespoons dried Oregano
- 1/4 cup Extra Virgin Olive Oil
- 2 Red Onions (cut into 1/4th-inch dice)
- 4 Garlic cloves (thinly sliced)
- 2 cups Dry White Wine
- 2 28-ounce cans Plum Tomatoes (crushed by hand

Smoked Bonless Leg of Lamb

If your boneless leg of lamb had been tied, remove its bindings so it's easier to marinate
- Leg of Lamb Marinade Recipe
- 1/2 cup white wine
- 1/2 cup red wine vinegar
- 1 tablespoon garlic salt
- 2 teaspoons sugar
- 1 teaspoon black pepper
- 1/2 cup extra virgin olive oil
- Stir together the wine, vinegar, garlic salt, sugar and pepper. Slowly add the olive oil, beating with a whisk to create an emulsion.
- Untie the leg of lamb, and marinate for 4 to 6 hours. Remove and drain. Tie back together into original shape. Pat exterior dry.
- Leg of Lamb Dry Rub Recipe
- 1 tablespoon onion powder
- 2 teaspoons dried rosemary leaves, crushed
- 2 teaspoons dried marjoram
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- Dijon mustard (on outside of lamb first)
Cesar Deviled Eggs (Anchovy)

1.Place the eggs in a medium saucepan and add baking soda and enough water to cover by 1 inch

- 3 flat anchovy fillets, finely chopped
- 1 clove garlic, finely chopped
- 2 tablespoons lemon juice
- 1 tablespoon mayonnaise
- 1 teaspoon Worcestershire sauce
- 1/3 cup extra-virgin olive oil
- Salt and pepper
- Paprika, for sprinkling
- 20 small Parmesan cheese curls, for garnish
My Spaghetti Sauce (Pressure Cooker)

Brown lamb shanks, a couple of sausage, and marrow bones in 3-4 T olive oil; then brown remaining sausage
- 2 lamb shanks
- 5 or 6 marrow bones
- 6 Italian sausage (3 sweet, 3 hot)
- 1 5 lb. can San Marzano peeled tomatoes (strain through mill or colander)
- 1 large (28 oz.) can Progresso tomato puree
- 2 large (15 oz.) cans Cento tomato sauce
- 1 large (12 oz.) can tomato paste (if cooking on stove, use 1 small can)
- 1/2 C red wine
- 3 medium yellow onions, chopped
- 7 or 8 cloves garlic, chopped
- Handful of basil
- 2 bay leaves
- Approx. ½ C red wine (Chianti)
Caponata (with squash)

This recipe yields about 4 cups
- 2 large zucchini, peeled and cut into small cubes (about 1/2-inch)
- 1 tablespoon granulated sugar
- 3 tablespoons extra-virgin olive oil, divided
- Kosher salt
- 1 tablespoon dried oregano
- 3 tablespoons red wine vinegar
- 2 heaping tablespoons golden raisins
- 1 medium onion, peeled and finely chopped
- 2 cloves garlic, peeled and grated
- 1 cup canned San Marzano whole plum tomatoes, drained of their liquid and broken into small pieces
- 3 medium-size stalks celery, cut into thin rounds
- 1 tablespoon capers, drained
- 12 green olives, preferably Cerignola, pitted and chopped

- Memphis Rub (recipe follows)

- 1 ⁄4 cup paprika (sweet or smoked)
- 1 tablespoon dark brown sugar
- 1 tablespoon granulated sugar
- 2 teaspoons salt
- 1 teaspoon celery salt
- 1 teaspoon freshly ground pepper
- Mop Sauce
- 1 cup apple cider vinegar
- 2 tablespoons packed brown sugar
- 1 teaspoon salt
- 1 teaspoon fresh ground pepper
- 1 teaspoon ground chipotle or cayenne
- Whisk together all ingredients.
