- Cheesy Garlic Mashed Potatoes:
- Ingredients:

Italian Pizza Chena (Easter Pizza)

In a large bowl, dissolve in 2 cups of warm water, yeast, sugar, and salt
- Dough:
- Makes approximately 2 pounds.
- 1 packet of active dry yeast
- 1 tablespoon sugar
- 1 tablespoon salt
- 2 cups of warm water
- 5-6 cups all-purpose flour
- 2 tablespoons olive oil
- Filling:
- 1 teaspoon olive oil
- 1/2 pound fresh, hot Italian sausage (in casing)
- 1/2 pound capocollo, thinly sliced
- 1/3 pound Genoa salami, thinly sliced
- 1/3 pound pepperoni, thinly sliced
- 1 pound fresh basket cheese***
- 1/2 pound mozzarella cheese, thinly sliced
- 1 dozen eggs (8 will be beaten, 4 will be hard boiled)
- 1/3 cup minced fresh flat leaf parsley
- 15-20 cranks freshly ground black pepper
- 1 egg beaten with 1 teaspoon water for egg wash

Directions In large pot heat 1/4 C olive oil over low heat
- 1/2 C olive oil
- 2 onion, chopped
- 12 cloves garlic, sliced
- 1 (90 oz) cans San Marzano tomatoes (put through sieve)
- 2 (28 oz) cans tomato puree
- 2 (15 oz) cans tomato sauce
- 2 (6 oz) cans tomato paste
- 2 pounds sweet Italian sausage
- 2 pounds ground sirloin
- 1/2 C chopped fresh parsley, divided
- 2 cups grated Romano cheese
- 4 tablespoons dried oregano
- salt and pepper to taste
- 2 pound pork meat, cubed
- 2 cup dry bread crumbs
- 6 tablespoons garlic powder
- 2/3 cup grated Parmesan cheese
- 4 eggs

This is a great combination of flavors! It is a healthy recipe that can be made ahead of time to save time
- 1 1/2 lbs head green cabbage, halved cored and coarsely shredded (12 cups)
- 1/2 cup riesling wine
- 1 tablespoon fresh lemon juice
- 3/4 tablespoon sugar
- 1/8 cup extra virgin olive oil
- 1/2 large onion, thinly sliced
- 1 granny smith apples, peeled halved, cored and sliced 1/8 inch thick
- 1/2 to taste salt & freshly ground black pepper
Creme de Menthe Layer Cake

This Creme de Menthe Layer Cake can be made in a layer cake or as a sheet cake
- CAKE:
- 1 package white cake mix
- all ingredients from the package white cake mix, but substitute 1/4 cup Creme de Menthe instead of water
- 1/4 about 1/4 cup mini chocolate morsels, optional
- FROSTING:
- 1 (12-ounce) bag semisweet chocolate chips
- 3/4 cup heavy cream
- 1 tablespoons light corn syrup
- 1/2 teaspoon pure vanilla extract
- 2 tablespoons butter, at room temperature
- whipped cream frosting or substitute Cool Whip with the Creme de Menthe
- 1-pint heavy cream
- 3 Tablespoons powdered sugar
- 2 teaspoons Creme De Menthe or 1/2 teaspoon mint extract, optional
- 2 to 3 drops of green food coloring, optional
- chocolate curls or sprinkles or mini chocolate chips, optional garnish
- CHOCOLATE CURLS, OPTIONAL GARNISH:
- 3 squares of semisweet Baker's chocolate
- 1 tablespoon shortening
