Grease a 9-by-13-inch ovenproof dish with the butter and set aside
- 1 tablespoon butter, for greasing
- 1 pound elbow macaroni
- 1 cup shredded Asiago cheese
- 1 cup shredded fontina cheese
- 1 cup shredded mozzarella cheese
- 1 cup halved cherry tomatoes
- 1 cup chopped sundried tomatoes, packed in oil and drained
- 1/2 cup chopped fresh basil
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 4 cups whole milk
- 2 tablespoons minced fresh garlic
- 1 tablespoon kosher salt
- 2 teaspoons cracked black pepper
- 1 teaspoon dried oregano
- 1 teaspoon red pepper flakes
- 2 tablespoons grated Parmesan, for topping
