Ingredients
- Rolled Pork Roast, boned and tied- 4 pounds or larger
- Cherry Preserves - 12 ounce jar (1 cup)
- 2 Tablespoons light corn syrup
- 1/4 cup red wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoons ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 cup slivered almonds

Step 1
Rub roast with a little salt and pepper. Place on rack in shallow baking pan. Roast, uncovered in slow oven (325 degrees) for about 2 to 2 1/2 hours.
Meantime, combine cherry preserves, corn syrup, vinegar, salt, cinnamon, nutmeg and cloves. Heat to boiling, stirring frequently; reduce heat and simmer 2 minutes. Add slivered almonds.
Keep sauce warm. When meat has roasted 2 to 2 1/2 hours, spoon enough hot cherry sauce over roast to glaze; return to oven for about 30 minutes more or until meat thermometer registers 175 degrees. Baste roast with sauce several times during last 30 minutes.
Pass remaining sauce with roast.
