Salted Chocolate Chip Cookies

Preheat oven to 350°. In a large bowl, mix (by hand) the sugars, soft butter, vanilla and eggs
- 1.25 cups granulated sugar
- 1.25 cups brown sugar
- 1.5 cups (3 sticks) butter softened (I use salted here because I love the salty/sweet combo)
- 1 Tablespoon vanilla
- 2 eggs
- 4 cups unbleached flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 2 bags of chocolate chips
- Sea salt for topping
Baked Cheese Blintz Loaf

alternate layers of each mixture, starting with batter pour into a greased 9 x 13-inch pan bake 1 hour @ 350°
- Batter—mix together:
- 1 cup butter
- 1 cup sugar
- 4 eggs
- 1 ½ cups milk
- 2 ½ cups flour
- 2 tsp baking powder
- Filling—mix together:
- 1 lb dry cottage cheese
- 4 Tbsp butter
- 2 eggs
- 4 Tbsp sugar
- 1 lb cream cottage cheese
salsa chicken casserole

Preheat the oven to 375 degrees
- 1 cup uncooked rice
- 1 cup frozen corn kernels (thawed)
- 1 (15 oz.) can black beans
- 1 (16 oz.) jar salsa
- 1 cup chicken broth
- 1/2 Tbsp chili powder
- 1/2 tsp oregano
- 2 large (1.5 lbs.) chicken breasts
- 1 cup shredded cheddar cheese
- 2 whole green onions, sliced
Mongolian Beef

Heat 2 teaspoons vegetable oil in a small saucepot over medium-low heat
- Vegetable oil
- 1/2 teaspoon minced fresh ginger
- 1 tablespoon minced garlic
- 1/2 cup low sodium soy sauce
- 1/2 cup water
- 2/3 cup dark brown sugar
- 1 (1-pound) flank steak
- 1/4 cup cornstarch
- 3 scallions (green parts only), sliced into 1-inch pieces
“Lasagna” Stuffed Shells

- 30-40 shells, boiled according to instructions
- 1 cup or 12 oz ricotta cheese
- 3 cups mozzarella cheese, divided
- 1/2 cup Parmesan cheese
- 2 eggs
- 1 package frozen spinach, defrosted and drained
- 2 jars or about 4 cups red tomato sauce
- 2 lbs ground turkey meat (optional)
Herbed Shrimp and White Bean Salad

- 4 teaspoons sherry vinegar
- 4 teaspoons extra-virgin olive oil
- 1 tablespoon chopped fresh thyme
- 2 teaspoons minced fresh garlic
- 1 teaspoon chopped fresh rosemary
- 1/2 teaspoon black pepper
- 2 cups loosely packed arugula
- 1 cup trimmed watercress
- 1 cup grape tomatoes, halved
- 1/4 cup chopped fresh flat-leaf parsley
- 1 (15.5-ounce) can Great Northern beans, rinsed and drained
- 1 tablespoon honey
- 1 teaspoon water
- 24 peeled and deveined medium shrimp (about 1 pound)
- Cooking spray
- 1/4 teaspoon salt
Lemon-Orzo Salad with Veggies and Chicken

Cook orzo according to package directions
- 3/4 C uncooked orzo pasta
- 1/4 tsp grated lemon rind
- 3 Tbs fresh lemon juice
- 1 Tbs extra virgin olive oil
- 1/2 tsp kosher salt
- 1/2 tsp minced garlic
- 1/4 tsp honey
- 1/8 tsp black pepper
- 1 C cooked shredded or diced boneless, skinless chicken
- 1/2 C diced cucumber
- 1/2 C diced red bell pepper
- 1/3 C sliced green onions
- 1 Tbs chopped fresh dill, or 1 tsp dried dill
- 1/2 C crumbled feta cheese
Garlic Bread Spread

Combine ingredients and mix well
- 2 tablespoons minced or mashed garlic (approx. 1 garlic bulb)
- 1/2 cup butter, softened
- 1/2 cup olive oil
- 1/4 cup Parmesan cheese
- 1/8 teaspoon crushed red pepper flakes
- 1/2 teaspoon Italian herb seasoning
- 1/2 teaspoon black pepper (freshly ground recommended)
- 1/4 teaspoon dry mustard
