Spinach Artichoke Pasta

Cook pasta according to package directions
- 1 12-oz box pasta
- 1 tsp butter
- 2 cloves garlic, minced
- 1 8 oz package reduced fat cream cheese
- 1/2 cup milk
- 1/2 cup reduced fat sour cream
- 1/2 lemon, juiced
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
- 1 14 oz can artichoke hearts (packed in water), drained and chopped
- 10 oz chopped, frozen spinach, thawed, with as much excess water squeezed out as possible
- 1/2 cup parmesan cheese, shredded
- Additional Parmesan for serving
S'more Brownies

Position a rack in the lower third of the oven and heat oven to 325 degrees F
- Crust:
- 6 tablespoons unsalted butter, melted
- 1 1/2 cups crushed graham cracker crumbs
- 2 tablespoons sugar
- Pinch fine salt
- Brownie:
- 8 tablespoons (1 stick) unsalted butter
- 4 ounces unsweetened chocolate, chopped
- 1 cup packed light brown sugar
- 3/4 cup white sugar
- 1 1/2 teaspoons pure vanilla extract
- 1/2 teaspoon fine salt
- 4 large cold eggs
- 1 cup all-purpose flour
- Topping:
- 4 cups large marshmallows
Goat Cheese and Spinach Scalloped Potatoes

Preheat the oven to 375 degrees
- 4 small yukon gold potatoes
- 1 tbsp butter
- 1 tbsp flour
- 3/4 cup milk (I used non fat)
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 tbsp sour cream
- 3/4 cup frozen spinach
- 1/2 cup cheddar cheese (I used low fat)
- 3 oz goat cheese
Creamy Corn and Vegetable Soup

Put 2 cups of the corn and the milk into a blender or food processor, until smooth
- 4 cups fresh corn kernels or 2 (10-ounce) packages frozen, thawed
- 2 cups nonfat milk
- 1 tablespoon olive oil
- 1 large onion, diced (about 2 cups)
- 1 medium red bell pepper, seeded and diced (about 1 cup)
- 1 medium zucchini, (about 1/2 pound) diced
- 2 cups low-sodium chicken or vegetable broth
- 2 plum tomatoes, seeded and diced
- 3/4 teaspoon salt
- Freshly ground black pepper
- 1/2 cup fresh basil leaves, cut into ribbons
Honey Citrus Glazed Salmon

Heat pan over medium heat and add the butter, honey, onions, orange juice, teriyaki sauce, and ginger
- 4 (½ pound) salmon fillets
- 1 Tbsp butter
- ½ cup honey
- ½ cup onions, finely diced
- 1 cup orange juice
- 2 tsps teriyaki sauce
- 1 tsp powdered ginger
Tuna Noodle Casserole

1. Preheat oven to 350 degrees 2
- 6 oz. egg noodles (wide or extra wide), cooked*
- 1 small can of tuna, drained and flaked with a fork
- 1 can cream of mushroom soup
- 1/2 cup milk
- 1 cup frozen peas, cooked
- 1/2 cup (or more) grated sharp cheddar cheese
- 1 cup fresh bread crumbs cooked in 1 T. butter until slightly crisp**
- fresh grated parmesan cheese***
Roasted Cauliflower Fettuccine

- 1 head cauliflower, cut into florets
- 3 tablespoons water
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 4 1/2 teaspoons olive oil, divided
- 8 ounces uncooked fettuccine
- 1 1/2 ounces pancetta or cured bacon, finely chopped
- 1 1/2 teaspoons grated lemon rind
- 1 tablespoon fresh lemon juice
- 2 teaspoons chopped fresh thyme
- 1 1/2 teaspoons minced fresh garlic
- 2 ounces Parmigiano-Reggiano cheese, shaved (about 1/2 cup)
S'mores Fudge

Line an 8x8 inch pan with parchment paper
- 1 (7 ounce) jar marshmallow creme
- 1 1/2 cups white sugar
- 2/3 cup evaporated milk
- 1/4 cup butter
- 1/4 teaspoon salt
- 2 cups milk chocolate chips
- 1 cup semisweet chocolate chips
- 1 teaspoon vanilla extract
- 6 graham crackers, chopped (plus a few crushed for top)
- 1 cup mini marshmallows
Nappa Cabbage Salad Dressing
