Shrimp Scampi with Linguini

For the pasta, put a large pot of water on the stove to boil
- 1 pound linguini
- 4 tablespoons butter
- 4 tablespoons extra virgin olive oil, plus more for drizzling
- 1 large shallot, finely diced
- 5 cloves garlic, sliced
- Pinch red pepper flakes, optional
- 20 large shrimp, about 1 pound, peeled and deveined, tail on
- Kosher salt and freshly ground black pepper
- 1/2 cup dry white wine
- 1 lemon, juiced
- 1/4 cup finely chopped parsley leaves
Passover Blintz Muffins

- 1 lb cottage cheese
- ½ stick melted margarine
- ¾ cup sugar
- ½ cup cake meal
- 4 eggs
- 1 tsp vanilla
Quinoa Guacamole Salad

Rinse the quinoa in a fine mesh sieve until the water runs clear
- 2 cups uncooked quinoa
- 2 cloves garlic, minced
- 2 Tablespoons chopped cilantro
- 2 teaspoons freshly grated lime zest
- 3 Tablespoons fresh lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 Tablespoons olive oil
- 2 avocados
- 2 tomatoes
- 1/2 cup chopped white onion
Firecracker Chicken

1.Preheat the oven to 325 degrees F
- For the sauce:
- 2-4 tablespoons canola oil
- 3-4 boneless, skinless chicken breasts (about 2 pounds)
- Salt and pepper
- 1 cup cornstarch
- 2 large eggs, beaten
- 1/3 cup hot sauce (I used Frank's)
- 1 cup packed light brown sugar
- 1 tablespoon water
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon salt
Cashew Chicken

In a medium bowl, stir cornstarch into broth until dissolved
- 1/2 cup fat-free chicken broth
- 1/2 tbsp. cornstarch
- 1 tbsp. reduced-sodium/lite soy sauce
- 1 tbsp. seasoned rice vinegar
- 1/4 tsp. ground ginger
- 2 cups quartered mushrooms
- 1 cup chopped onion
- 1 tsp. chopped garlic
- 8 oz. raw boneless skinless chicken breast, cut into bite-sized pieces
- 1/8 tsp. each salt and black pepper
- 1 cup snow peas
- 1/4 cup unsalted roasted cashews
- 2 tbsp. chopped scallions
Velvety Pumpkin Cream Sauce

heat a saucepan over medium heat until warm, 1-2 minutes
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 medium vidalia onion, finely minced
- 1/2 cup white wine
- 15 ounces pumpkin puree (1 small can)
- 1 tablespoon sugar
- 1 cup chicken stock
- 2 tablespoons fresh sage, minced
- 3 tablespoons heavy cream
- 1 cup pasta water (see note)
- 1/2 cup pecorino romano cheese (parmigiano reggiano would be lovely as well)
- salt and pepper to taste
