Baked Chicken Fajitas

Preheat the oven to 400 degrees
- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 (15 oz) can diced tomatoes
- 1 (4 oz) can diced green chilies
- 1 medium onion, sliced
- 1 large bell pepper, seeded and sliced
- 2 T vegetable oil
- 2 t. chili powder
- 2 t. cumin
- 1/2 t. garlic powder
- 1/2 t. dried oregano
- 1/4 t. salt
- 12 flour tortillas, warmed to serve

in a small bowl, mix first set of ingredients beat well and stir in chocolate chips
- First Set:
- 1 8-oz. pkg. cream cheese
- 1 unbeaten egg
- 1/3 cup sugar
- 1/8 tsp salt
- 6 oz. mini chocolate chips
- Second Set:
- ½ cup flour
- 1 cup sugar
- ¼ cup dark cocoa
- ½ tsp salt
- 1 tsp baking soda
- 1/3 cup oil
- 1 tsp vinegar
- 1 tsp vanilla
- 1 cup water
Chocolate Chip Pumpkin Bread

Preheat oven to 350 degrees
- 2 cups all purpose flour (spooned into measuring cup and leveled)
- 1 cup whole wheat flour (again, don’t scoop!)
- 2 teaspoons ground cinnamon
- 1/2 teaspoons nutmeg
- 1/4 teaspoons ground cloves
- 1 teaspoon baking soda
- 1 1/2 teaspoon baking powder
- 1 teaspoon table salt
- 1/2 cup brown sugar
- 1 1/2 cup white sugar
- 6 ounce container vanilla yogurt
- 3 eggs, slightly beaten
- 15 ounce can pumpkin puree
- 1/2 cup canola oil
- 1 teaspoon vanilla extract
- 1 cup chocolate chips (plus a few extra for the top of loaves)

- 2/3 cup light brown sugar
- 1 stick unsalted butter, melted and cooled slightly
- 3 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3 tart apples (such as Macintosh), peeled cored and thnly sliced
- 1/2 cup dried cranberries
- 1 pound loaf bread (such as challah or brioche…..i’ve used cinnamon raisin too)
- 6 large eggs
- 1 1/2 cups whole milk
- 1 tablespoon vanilla extract
