S’mores Pie

Preheat oven to 325. Add melted butter and graham cracker crumbs together until a crust forms
- For the crust:
- 1 3/4 cups graham cracker crumbs
- 1 1/4 sticks butter, melted
- For the chocolate filling:
- 1 cup heavy cream
- 1/2 cup milk
- 10 ounces semisweet chocolate, chopped
- 2 tablespoons sugar
- 1/4 teaspoon salt
- 2 eggs
- 1 bag of large marshmallows
Mexican Black Beans & Cheese Pasta

1. Start by boiling a pot of water on high heat
- Pot of water - enough for pasta
- 1 lb. box Barilla Whole Grain Medium Shells
- 2 tablespoons canola oil
- 2 bunches scallions, chopped
- 2 jalapenos, de-seeded
- 3 cloves garlic, chopped
- 1 medium onion, chopped
- 2 plum tomatoes, chopped
- 2 10-ounce cans enchilada sauce
- 1 15-ounce can black beans
- 3 dollops taco seasoning
- 2 cups Mexican cheese, shredded
- 1/2 cup sour cream, reduced fat
- 1/2 teaspoon black pepper
- salt to taste
- 1 handful fresh cilantro, chopped
Blueberry Crumb Cake

For the streusel: Combine the granulated sugar, brown sugar, cinnamon, and nutmeg in a bowl
- For the streusel:
- 1/4 cup granulated sugar
- 1/3 cup light brown sugar, lightly packed
- 1 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/4 pound (1 stick) unsalted butter, melted
- 1 1/3 cups all-purpose flour
- For the cake:
- 6 tablespoons unsalted butter, at room temperature (3/4 stick)
- 3/4 cup granulated sugar
- 2 extra-large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon grated lemon zest
- 2/3 cup sour cream
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking powder

Heat oven to 350°F. Bake rolls as directed on bag; place on cooling rack
- 2 Pillsbury® Grands!® frozen cinnamon rolls with icing (from 17.5-oz bag)
- 2/3 cup milk
- 3 tablespoons sugar
- 1 tablespoon butter or margarine, melted
- 1/4 teaspoon almond extract
- 1 egg
- 2 tablespoons dried cherries
- 2 teaspoons miniature semisweet chocolate chips
- 1 icing packet from bag of cinnamon rolls
Overnight French Toast Casserole

In a small bowl combine brown sugar and melted butter and pour on the bottom of a 9x13 baking dish
- 1/4 cup (4 Tablespoons) butter, melted
- 3/4 cup packed light brown sugar
- 1 loaf brioche or challah (French toast can also be sliced 1 1/2 inches thick)
- 8 eggs, slightly beaten
- 1 cup whole milk
- 1 Tablespoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/2 cup pecans, measured then chopped
- 1/8 teaspoon salt
- (optional) maple syrup and powdered sugar for topping

- 1 cup finely chopped white onion
- 1 clove minced garlic
- 4 cups baby spinach leaves
- 2 cups cooked shredded chicken breast

- 3 1/2 cup whole wheat flour
- 2 cup Quaker oats
- 1 cup milk
- 1/2 cup hot water
- 2 beef or chicken bouillon cubes
- 1/2 cup meat drippings
Great Northern Bean Chili

In a large skillet, brown chicken in oil; drain
- 2 lbs boneless skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon canola oil
- 1 jar (48 ounces) great northern beans, rinsed and drained
- 1 jar (16 ounces) salsa
- 1 can (14 1/2 ounces) chicken broth
- 1 teaspoon ground cumin
- 2 cups (8 ounces) Monterey Jack cheese
Chicken Chili

Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent
- 4 cups chopped yellow onions (3 onions)
- 1/8 cup good olive oil, plus extra for chicken
- 1/8 cup minced garlic (2 cloves)
- 2 red bell peppers, cored, seeded, and large-diced
- 2 yellow bell peppers, cored, seeded, and large-diced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon dried red pepper flakes, or to taste
- 1/4 teaspoon cayenne pepper, or to taste
- 2 teaspoons kosher salt, plus more for chicken
- 2 (28-ounce) cans whole peeled plum tomatoes in puree, undrained
- 1/4 cup minced fresh basil leaves
- 4 split chicken breasts, bone in, skin on
- Freshly ground black pepper

- 1 cup (2 sticks) unsalted butter, room temperature
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 large egg yolks
- 1 teaspoon pure vanilla extract
- 2 1/4 cups all-purpose flour (spooned and leveled)
- 1/4 cup of raspberry preserves/jam (you can substitute this for whatever filling you like)
