Roasted Potato with Mustard and Pesto Sauce

  • Sauce:
  • 1 bag Russet potatoes, halved and then quartered
  • salt, pepper, paprika, rosemary, bay leaf, garlic powder, olive oil
  • 2 cups mayo
  • 4 tbsp. pesto
  • 2 tbsp. yellow mustard



Step 1

Dress potatoes in oil and spices to taste. Roast potatoes in a single layer in oven for 30-40 mins. at 400F until crisp outside and tender inside. Combine sauce ingredients and coat potatoes with sauce.
