- 1/2 cup uncooked rotini or spiral pasta
- 1 small onion, finely chopped
- 540ml can black beans, rinsed and drained

- finely grated zest from 1 lemon
- 1/4 tsp. salt
- 2 garlic cloves, minced

- 1 tbsp. unflavoured gelatin

- 1 lb. shrimp
- 1 grapefruit, cut into segments

- 2 tbsp. mayonnaise
- 1 sprig fresh oregano, chopped
- 2 tbsp. (choice) of citrus juice
- 1 chopped green onion

Coconut Lime Rice Noodle Salad

Prepare noodles according to package directions
- 2 ounces brown rice maifun noodles, also known as brown rice vermicelli (TRY: Annie Chun’s Maifun Brown Rice Noodles)
- 2 1/2 tablespoons coconut milk
- 2 1/2 teaspoons fresh lime juice
- 1 1/4 teaspoons safflower oil
- 1 pinch sea salt
- 1/2 medium mango, peeled, pitted and thinly sliced into 2-inch lengths
- 1/2 medium red bell pepper, seeded and thinly sliced into 2-inch lengths
- 1/2 small English cucumber, seeded and thinly sliced into 2-inch lengths
- 1/2 avocado, peeled, pitted and chopped
- 1/2 jalapeño chile pepper, seeded and thinly sliced
- 2 tablespoons roughly chopped fresh cilantro leaves
- 1 tablespoon chopped raw unsalted cashews (toasted, if desired)

- a few tablespoons of olive or coconut oil
- Teaspoon cumin
- Teaspoon salt
- 1 bundle of kale
- 1 cup of brown rice
- Almonds
- Micro greens or sprouts
- Maple syrup lime avocado dressing
- Spice roasted Chickpeas
- 1 can chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon of cumin
- 1 teaspoon paprika
- 1/2 teaspoon sea salt
- 1 table spoon honey (optional)
- Ingredients for avocado dressing
- 1/2 large avocado or 1 whole if it's small
- Juice from 1 lime, about 2 tablespoons
- 1 tablespoon rice vinegar
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1/2 tablespoon honey or maple syrup
- 1/4 teaspoon cumin
- 1/4 cup of water
- Salt to taste
- Combine all ingredients in a blender.
Toffee Apple Squares

Preheat oven to 350. Grease a 9 X 13 baking pan
- 2 cups flour or whole wheat flour
- 2 cups quick cooking oats
- 1 cup brown sugar, packed
- 1 tsp. each: baking soda, nutmeg and salt
- 1 cup cold butter, cut into cubes
- 6 peeled apples, thinly sliced
- 2 tbsp. each: lemon juice and sugar
- 2 tsp. cinnamon
- Sauce: 1 pkg. (200g) Chipits Skor toffee bits
- 1/3 cup whipping cream
