To make the dough, in the bowl of a stand mixer fitted with the paddle attachment combine the dry ingredients
- For the dough:
- 3 cups bread flour
- 1 tbsp. sugar
- 2 tsp. instant yeast
- 1 1/4 tsp. salt
- 2 tbsp. olive oil
- 1/4 cup milk
- 1 cup plus 2 tbsp. lukewarm water
- For the glaze:
- 2 cloves garlic
- 3 tbsp. melted butter
- 1/2 tsp. Italian seasoning
Crab Hushpuppies

Directions In a Dutch oven, heat oil to 350 degrees F
- oil, for frying
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon minced thyme
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 teaspoon garlic pepper
- 1/2 teaspoon baking soda
- 1/2 teaspoon cayenne pepper

- 12 oz. good-quality milk, dark, OR white chocolate, very finely chopped
- 2 T. solid vegetable shortening or cocoa butter
- 6 to 8 oz. small, salted pretzels
- For Garnish: Small amount grated or shaved chocolate (in contrasting color from the color of the chocolate in which you dip the pretzels) OR chocolate sprinkles.
