Mini Pumpkin Cheesecakes with Cinnamon Whipped Topping

Preheat an oven to 325 F. Lightly butter the wells of a miniature cheesecake pans
- For the crust
- 1/2 cup gingersnap crumbs
- 1/2 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, melted

- For the filling
- 1 cup canned pumpkin
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1 teaspoon freshly grated nutmeg
- 14 ounces cream cheese (do not use light cream cheese)
- 1/3 cup sugar
- 2 large eggs
- 1/2 teaspoon pure vanilla extract
- For the whipped cream
- 1 cup heavy cream
- 1 1/2 teaspoons pure vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon freshly grated nutmeg

- 48 * 48 soft caramel-candy cubes
- 1/2 * 1/2 cup heavy cream
- 2 * 2 cups old-fashioned rolled oats
- 2 * 2 cups all-purpose flour
- 1 * 1 cup packed light brown sugar
- 3/4 * 3/4 teaspoon baking soda
- 1 * 1 teaspoon salt
- 10 * 10 ounces (2 1/2 sticks) unsalted butter, cut into small pieces

- 1/3 cup butter or margarine, softened
- 3 teaspoons vanilla
- 9 cups powdered sugar

French Dip - slow cooker style

1. Trim excess fat from the rump roast, and place in a slow cooker
- 4 * 4 pounds rump roast
- 1 * 1 (10.5 ounce) can beef broth
- 1 * 1 (10.5 ounce) can condensed French onion soup
- 1 * 1 (12 fluid ounce) can or bottle beer
- 6 * 6 French rolls
- 2 * 2 tablespoons butter

- 1/2 cup chopped walnuts
Slow Cooker Chili

Heat olive oil in a large and deep non-stick skillet over medium-high heat
- Serve topped with:
- 1 Tbsp olive oil
- 2 lbs lean ground beef
- 1 large yellow onion, finely chopped
- 3 cloves of garlic, finely minced
- 2 (14.5) oz cans diced tomatoes with green chilies*
- 3 (8 oz) cans tomato sauce
- 1/2 cup water or beef broth
- 2 Tbsp chili powder
- 2 1/2 tsp ground cumin
- 2 tsp paprika
- 2 tsp cocoa powder
- 1 tsp granulated sugar
- 1/2 tsp ground coriander
- Salt and freshly ground black pepper, to taste
- 1 (15 oz) can dark red kidney beans, drained and rinsed
- 1 (15 oz) can light red kidney beans, drained and rinsed
- Cheddar and Monterey Jack cheese, sour cream, chopped red or green onions, cilantro, roasted peppers, or hot sauce
- Optionally serve with:
- fresh cornbread or biscuits, baked russet potatoes, saltine crackers or tortilla chips
