- extra virgin olive oil spray (I used my misto, lets assume 1/4 tsp)

Makes 12 tacos serving 4 to 6 Recipe from Season 4 of Mexico - One Plate at a Time
- Salsa
- 1/2 pound (about 4 medium) tomatillos, husked, rinsed and cut into quarters
- 1 large garlic clove, peeled
- Hot green chiles to taste (roughly 2 serranos or 1 jalapeno), stems broken off, roughly chopped
- 1/2 to 2/3 cup (loosely packed) cilantro, thick lower stems cut off
- Salt
- 1 ripe, medium avocado, pitted, flesh scooped from the skin, cut into 1/4-inch pieces
- Finishing the dish
- 1/2 cup soy sauce
- 1/4 cup water
- 1/4 cup mirin (sweet rice wine) - available at well-stocked grocery stores
- 2 tablespoons sugar
- 2 tablespoons vegetable oil
- 2 cups (8 ounces) coarsely shredded roast duck meat (pulled off half of a Chinese roast duck)
- 12 warm flour tortillas, for serving

- 4 (4-ounce) boned pork loin chops (about 1/2 inch thick)
- 1/4 cup water
- 1 cup chopped onion
- 1/2 cup yellow bell pepper strips
- 1/2 cup red bell pepper strips
- 1 tablespoon minced seeded jalapeño pepper
- 1 can (14.5-ounce) can diced tomatoes with garlic and onion, undrained
- 1/2 ounce semisweet chocolate, grated
- 1 teaspoon chili powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt

Place first 15 ingredients in a blender or food processor, and process until smooth
- 2 cups coarsely chopped green onions
- 1/2 cup coarsely chopped onion
- 2 tablespoons white vinegar
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 2 teaspoons kosher salt
- 2 teaspoons fresh thyme
- 2 teaspoons brown sugar
- 2 teaspoons chopped peeled fresh ginger

- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
