Garlic Slaw

Most cole slaws are too sweet for my taste
- 1 pound packaged shredded cole slaw (preferably tri-color)
- 1 cup mayonnaise (go for the real stuff, a friend tried low fat mayo and he said it wasn't any good)
- 3 or 4 cloves of garlic pushed through a press
- 1/2 teaspoon garlic powder
- couple shakes garlic salt
- 1 tablespoon garlic juice (if you can't find bottled garlic juice, use the liquid inside the bottled minced garlic).
- 1 teaspoon white wine vinegar
Pumpkin Cake

Cake: Preheat oven to 350 degrees
- Cake:
- 2 cups sugar
- 4 eggs
- 1 cup oil
- 2 cups pumpkin
- 2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- Frosting:
- 3 oz cram cheese
- 3/4 stick butter
- 1 teaspoon vanilla
- 1 3/4 cup powdered sugar
Steak-House Dinner (w/ creamed spinach)

Pat steak dry and sprinkle all over with a scant 1/2 tsp salt and 1/4 tsp pepper
- 1 (1-inch-thick) boneless beef top loin (strip) steak (1/2 pound)
- 1 teaspoon olive oil
- 1 teaspoon unsalted butter
- 1 small shallot, thinly sliced
- 1/4 cup heavy cream
- 1 tablespoon Saga Blue cheese
- 5 ounces baby spinach (10 cups)
- 1 1/2 teaspoon fresh lemon juice
Dates with Goat Cheese Wrapped in Prosciutto

Heat broiler to low. Spoon 1 teaspoon cheese into each date; wrap with a basil leaf, then a prosciutto strip
- 1/3 cup soft herbed goat cheese
- 16 Medjool dates, pitted
- 16 large basil leaves
- 4 wide, thin slices prosciutto di Parma, each cut into 4 long strips
- 16 toothpicks, soaked in water 10 minutes
Crispy Pork Cutlets wtih Capters, Lemon, Arugula, and Chopped Eggs

Set 1 rack on each of 2 rimmed baking sheets
- 1 lemon
- 1 teaspoon chopped fresh sage
- 1 teaspoon chopped fresh thyme
- 1 teaspoon coarse kosher salt plus 1 large pinch
- 1 teaspoon freshly ground black pepper
- 2 large heritage pork tenderloins (2 1/2 pounds total)
- 1/2 cup all purpose flour
- 3 large eggs, beaten to blend
- 3 cups fresh breadcrumbs made from crustless French bread
- 3/4 cup freshly grated Parmesan cheese
- Olive oil
- 3 tablespoons drained capers
- 4 cups (lightly packed) arugula
- 2 tablespoons extra-virgin olive oil
- 4 warm or room-temperature large hard-boiled eggs, peeled, coarsely chopped
Tomatillo and Green Apple Sauce

- 1/2 lb fresh tomatillos (about 5), husks discarded and tomatillos rinsed
- 2 Granny Smith apples
- 1/2 cup loosely packed fresh cilantro sprigs
- 1 garlic clove, minced
- 1 teaspoon ground cumin
- 1/4 cup apple juice
- 1 tablespoon fresh lime juice
- 1 tablespoon mild honey
- 1 teaspoon minced canned chipotle chiles in adobo
Basil Croutons with Cherry Tomatoes

- 1/2 loaf French bread
- 2 cups fresh basil leaves, loosely packed, finely chopped
- 2 cloves garlic, or to taste, minced
- 2 ounces Parmesan cheese, grated
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon coarse salt, plus more for seasoning
- 1/4 teaspoon freshly ground pepper, plus more for seasoning
- 12 to 15 cherry tomatoes
Cranberry Sauce

In a 2 quart saucepan over medium heat, heat sugar & water to boiling
- 2 cups sugar
- 1 1/2 cups water
- 16 oz package cranberries
