- 3 cups sliced large shallots (about 6)
- 8 ounces small elbow macaroni (2 cups)
- 1 1/4 cups half and half
- 2 1/2 teaspoons hot sauce (such as Cholula)
- 2 cups (packed) coarsely grated extrasharp cheddar cheese (about 8 ounces)
- 1 1/2 tablespoons all purpose flour
- 2/3 cup crumbled soft fresh goat cheese
Cool Couscous Salad

Make the couscous according to the directions
- 1 (10-ounce) box instant couscous
- 6 ounces marinated artichoke heart quarters - drain and reserve liquid
- 1 cup halved cherry tomatoes
- 3 scallions, thinly sliced on a diagonal
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 large cucumber, peeled, seeded and cut into large dice
- 1/2 cup loosely packed mint leaves, roughly torn
- 1 store bought roast chicken
- 1 lemon, juiced

- Salt and freshly ground black pepper

Toss shrimp with Creole seasoning in medium bowl to coat
- 1 pound uncooked peeled deveined large shrimp
- 1 tablespoon Creole or Cajun seasoning
- 2 tablespoons vegetable oil, divided
- 1 pound andouille sausage, cut crosswise on diagonal into 3/4-inch-thick pieces
- 1 large onion, halved, thinly sliced
- 1 large red bell pepper, cut into 1/3-inch-wide strips
- 1 tablespoon chopped fresh thyme
- 1 cup low-salt chicken broth
- 5 tablespoons Creole mustard (such as Zatarain's)
- 2 teaspoons red wine vinegar

- 1 pound small shrimp, shelled
- 1/4 cup olive oil
- 3 garlic cloves, finely chopped
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon paprika
- 1 tablespoon fresh lemon juice
- Salt and freshly ground black pepper
- 1 tablespoon chopped fresh parsley

- 2 cups apple cider
- 3/4 cup cider vinegar
- 1/2 cup bourbon
- 1/2 cup water
- 1/4 cup Worcestershire sauce

- 1/2 teaspoon salt

- 1 chicken, about 4 lb., cut into 10 serving pieces

- 1 to 2 Tbs. Tabasco sauce
- 6 cups canola oil
- 1 1/2 cups all-purpose flour
- 1/2 tsp. paprika
- 4 ears of corn, shucked and boiled until tender

- Tart Pastry:
- 2 1/2 cups flour
- 1/2 cup Crisco
- 1/4 cup cold butter, cut into pieces
- 1 teaspoon salt
- 3-4 tablespoons ice cold water (may take up to 6)
- Dijon mustard
- Onion Filling:
- 3 tablespoons butter
- 3 large red onions, halved vertically then thinly sliced
- 4 large eggs, slightly beaten
- 2 cups cream
- 1/3 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon cayenne pepper
- 1 small can diced green chilies (drained well) OR sliced Anaheim pepper thrown in with the onions
- 2 cups shredded Gruyère or Swiss Cheese
