Blend up tomatoes until fairly smooth

  • 3-4 TBsp Extra Virgin Olive Oil
  • 4-8 fresh garlic cloves (Karen says she uses 8 or more- I used 6)
  • 1 (29oz) can of tomatoes (for a milder sauce add more)
  • 1/4 cup tomato paste
  • 1/4 cup fresh basil, or as much as you like (I left this out because I didn’t have any)
  • 1 tsp Better than Bouillon, beef flavor, or 1 bouillon cube
  • Mild cayenne pepper (optional)

Preheat oven to 350. Slice each chicken breast in half, cutting down the middle

  • 3 whole chicken breasts, bonesless, skinless
  • 1 lb thinly sliced ham
  • 16 oz swiss cheese (I used 8oz sliced package-just cut the slices in half)
  • 8 oz cream cheese (I used low fat)
  • 2 1/2 cup hot water (I used chicken broth instead)
  • 3 Tbsp granulated chicken bouillon (if using broth omit this)
  • 1/2 cup white cooking wine
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 cup butter ( I cut this down by a couple tablespoons)
  • 3 cups seasoned dry bread crumbs
  • toothpicks

Dip the chicken in egg and then in bread crumbs

  • Sauce Ingredients:
  • 2 Tb olive oil
  • 1 large onion, chopped (approx 1 cup)
  • 2 cloves garlic, crushed
  • 3 cans Italian diced tomatoes
  • 1 Tb sugar
  • 1/2 tsp basil
  • 1 tsp oregano
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • Saute onion and garlic in olive oil until onions are tender and transparent. Add the rest of the ingredients and let simmer for 10 minutes.
  • Chicken ingredients:
  • 1-2 pounds chicken breasts
  • 2 eggs
  • Italian breadcrumbs
  • 1/4-1/2 c olive oil
  • 8 oz very thinly sliced mozzarella
  • 1/4 c Parmesan cheese
