Spicy Apple Butter BBQ Pork Cupcakes

Bake them up the night before if you like – they’ll keep just fine
- Apple Butter BBQ Sauce Ingredients and How To:
- 1 onion, chopped
- 2 tablespoons butter
- 1 recipe Homemade Pizza Dough, proofed and ready
- 2 cups Pulled Pork, shredded
- 2/3 cup Prepared Spicy Apple Butter Barbeque sauce (recipe follows)
- 8 ounces fresh Mozzarella, thinly sliced
- 1/2 cup sautéed onions
- 1 clove garlic, minced
- 1 Tablespoon Worcestershire Sauce
- 1 cup Apple Cider Vinegar
- 1 Tablespoon Kosher Salt
- 1 Tablespoon Red Chili Flakes
- 1 Tablespoon Sugar
- 1/4 cup Light Brown Sugar
- 1/2 cup Ketchup
- 3/4 cup Musselmann’s Apple Butter
- 1/2 teaspoon Black Pepper
- Place all ingredients in a medium saucepan over low to medium heat. Bring to a boil, then reduce heat and simmer for 20-25 minutes. Remove from heat; use as desired.
Pineapple Onion and Bacon Pizza

Set a large frying pan over medium heat, spritz with nonstick cooking spray and add bacon
- Crust:
- 1 premade pizza crust (SparkPeople recommends whole-wheat crust)
- Toppings:
- 4 slices center-cut bacon
- 3/4 cup (6 ounces) shredded part-skim mozzarella
- 1/4 cup diced red onion
- 1 cup pineapple chunks (fresh or canned, drained)
- Sauce:
- 4 Roma tomatoes, peeled, seeded and cored
- 1/2 tsp Italian seasoning
- 1/2 tsp basil
- 1/2 tsp fennel seed
- 1/2 tsp salt
- 1/2 tsp red pepper flakes
- 1/2 Tbsp extra virgin olive oil
- 1/4 t minced garlic
- 1 t brown sugar (unpacked)
Mango Salsa

Mix together and refrigerate
- 1 – Mango
- 1 – Small can crushed pineapple
- 1/2 cup red onion – chopped
- 1 – Splash olive oil
- 1 – Juice of lime
- 1/4 tsp. salt
- Cayenne pepper to taste
- Jalapeño pepper to taste – chopped
Ribs with strawberry jalapeno barbecue sauce

Preparation Rub and rest the ribs
- For the ribs:
- 2 (3-4 pound) slabs baby back ribs, silver skin removed from concave side of ribs
- Kosher salt and black pepper
- 2-3 pieces Mesquite wood chunks or 4 cups chips, soaked in water for at least 30 minutes
- For the sauce:
- 4 tablespoons olive oil
- 2 cups finely chopped Vidalia or sweet onion
- 4 jalapenos, chopped (keep the seeds!)
- Kosher salt and black pepper
- 6 cloves garlic, finely minced or grated on a rasp
- 2 pints cherry tomatoes
- 1 pound strawberries, hulled and chopped
- 1 cup dark brown sugar, tightly packed
- 4 tablespoons grained with wine Dijon mustard
- 1 tablespoon apple cider vinegar
Key Lime Pie

- 1 - Graham Cracker Crust
- 1/2 c - Key Lime Juice
- 1 Can - Condensed milk
- 8 oz - sour cream
- whipped cream for topping
Shepherd’s Pie with Cheddar-Spiked Mashed Potatoes

- Filling:
- 1 Tbs. olive oil
- 2 medium carrots, chopped
- 1 cup pearl onions (frozen or jarred, no need to thaw if frozen)
- 2 cloves garlic, minced
- 1-1/4 lb. lean beef round, cut into 1-inch cubes (or chicken breast)
- 1 Tbs. all-purpose flour
- 1 tsp. dried oregano
- 1/2 tsp. table salt
- 1/2 tsp. freshly ground black pepper
- One 28-oz. can diced tomatoes
- Cheddar-Spiked Mashed Potatoes:
- 2 medium Idaho potatoes, peeled and cut into 1-inch chunks
- 1/2 cup shredded reduced-fat cheddar cheese
- 1/4 cup low-fat sour cream
- Table salt and freshly ground black pepper
Phyllo-Wrapped Asparagus with Prosciutto
