Ripe Tomato Pizza Sauce

Heat oil in a saucepan over medium heat
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 4 large red tomatoes (2 lbs. total), chopped
- 1 teaspoon sugar
- 1/4 teaspoon red chile flakes
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh oregano leaves
Grasshopper Milkshake

In a blender, combine ice cream, milk, and crème de menthe
- 2 cups mint-chocolate chip ice cream
- 1/2 cup milk
- 2 tablespoons crème de menthe
- 1 miniature or broken cream filled chocolate sandwich cookie
Carolina Barbequed Pork

Place the onions in the Crock-Pot'" Slow Cooker
- 2 onions, quartered
- 2 tbs. brown sugar
- 1 tbs. paprika
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 4-6 lb. boneless pork butt or shoulder roost
- 3/4 cup cider vinegar
- 4 tsp. Worcestershire sauce
- 1 1/2 tsp. crushed red pepper flakes
- 1 1/2 tsp. sugar
- 1/2 tsp. dry mustard
- 1/2 tsp. garlic salt
- 1/4 tsp. cayenne pepper
Homestead Basic Thai Chile Paste

Chop peppers and mince garlic
- 75 Thai chiles, finely chopped *or*
- 10 Bermuda peppers (or Jalapenos) plus 6 Mirasol peppers
- (or Serranos or Cayennes), finely chopped
- 6 cloves garlic, minced
- 3 Tbsp fresh lime juice (about 1 lime)
- 1 Tbsp sugar
- 1 tsp chicken stock base
- 1 tsp olive oil
- 1/2 tsp salt
Curried Chicken Pitas

Place all the sauce ingredients into a food processor or blender
- Sauce:
- 1/2 cup onions, diced
- 1 teaspoon ginger
- 2 cloves garlic
- 1 teaspoon curry powder
- 1 teaspoon cumin
- 1 lime, cut in half (reserve one half for deglazing pan)
- 2 teaspoons vegetable oil
- 1/2 cup onion, sliced
- 16 ounces extra lean ground chicken
- 2 tablespoons low-fat plain yogurt
- 2 tablespoons water
- 1 1/2 cups frozen peas
- 4 green onions, greens and whites sliced
- 2 tablespoons cilantro, chopped
- 2 tablespoons low-salt roasted peanuts, chopped
- 4 whole-wheat pitas, cut in half
- 4 cups dark greens or lettuce, chopped
Chicken Cordon Bleu - Cooking Light

This lightened version of Chicken Cordon Bleu remains tres délicieuse despite a modest amount of butter
- 1/4 cup fat-free, less-sodium chicken broth
- 5 teaspoons butter, melted
- 1 large garlic clove, minced
- 1/2 cup dry breadcrumbs
- 1 tablespoon grated fresh Parmigiano-Reggiano cheese
- 1 teaspoon paprika
- 4 (6-ounce) skinless, boneless chicken breast halves
- 1/4 teaspoon salt
- 1/4 teaspoon dried oregano
- 1/4 teaspoon freshly ground black pepper
- 4 thin slices prosciutto (about 2 ounces)
- 1/4 cup (1 ounce) shredded part-skim mozzarella cheese

- 4 light string cheese sticks
- 1 T flour
- 1 c panko (Japanese bread crumbs)
- 1/2 c egg substitute (or 2 egg whites)
- 1 1/2 T Italian Herb Seasoning Blend

- Baguette, sliced lengthwise*
- Olive oil, to brush
- Salt and freshly ground black pepper
- 3 ounces fresh goat cheese
- 2 thinly sliced heirloom tomatoes
- 4 large eggs, poached
- 1 cup micro arugula

- 1 teaspoon Dijon mustard
- 1 1/2 teaspoons finely chopped fresh tarragon

- 1/4 teaspoon freshly ground black pepper
