Swedish Potatoes

This dish can be prepared the day ahead and then baked 30 minutes before needed
- 6 large potatoes, pared
- 3/4 cup sour cream
- 1 small pkg of cream cheese (4 oz) at room temperature
- 1 1/2 tsp onion salt
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 Tbsp butter
- CRUMB TOPPING
- 1 1/2 Tbsp butter, melted
- 3/4 cup soft, fine breadcrumbs
State Fair Deep-Fried Pickles

Stir together flour, baking soda, and salt in a medium-sized bowl
- 4 to 5 large spicy pickles, sliced into chips
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 cup buttermilk
- Canola oil for frying
Butternut Squash and Apple Bake

Preheat the oven to 350 F
- 1 small butternut squash (about 2 lbs)
- 2 Granny Smith spples
- 1/2 cup brown sugar
- 1 Tbsp unbleached flour
- 1 tsp salt
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 4 Tbsp cold margarine
Baked Pickle Chips

1. Preheat oven to 400. Heat a skillet over medium high heat
- 1/2 cup Panko bread crumbs
- 2 tablespoons flour
- 2 egg whites, lightly beaten
- 32 low sodium kosher dill pickle chips.
Honey Flax Seed Bread

Preheat the oven to 190°C (375°F)
- 1/3 cup (75 ml) warm water, 40°-45°C (105°-115°F)
- 2 packages or 4 1/2 tsp (22 ml) active dry yeast
- 2 cups (500 ml) warm Silk Original soy, almond or coconut beverage, (40°-45°C)
- 3 Tbsp (45 ml) canola oil, plus more for greasing the bowl
- 2 Tbsp (30 ml) buckwheat or alfalfa honey
- 2 Tbsp (30 ml) molasses
- 1 1/2 tsp (7 ml) salt
- 6-6 1/2 cups (1500-1625 ml) whole wheat flour
- 1/2 cup (125 ml) flax seeds
Summer Tomato-Bread Soup

DIRECTIONS Trim off the crusts from the bread and cut the bread into 1-inch cubes; you should have about 1/2 pound
- 1 pound country-style bread
- 3 tablespoons extra-virgin olive oil, plus olive oil for garnish
- 2 small cloves garlic, thinly sliced
- 5 to 5 1/2 pounds ripe plum (Roma) or beefsteak tomatoes, peeled, seeded and chopped (7 cups)
- 1 fresh sage leaf, minced
- 1/2 teaspoon minced fresh basil
- Salt and freshly ground pepper
- 3-4 cups vegetable or meat stock
- 2 teaspoons red wine vinegar
Vegan Chicken Substitue

An easy homemade seitan or the "Vegetarian Wheat Meat"
- Seitan:
- 1 1/2 cups gluten flour
- 2 Tbsp whole wheat flour
- 1/2 tsp onion powder
- 1/4 tso garlic powder
- Broth:
- 6 cups water
- 1/2 cup "chicken" flavoured broth powder
- 1/3 cup soy sauce
Slow Cooker Mac and Cheese

Spray a 4-quart slow cooker with cooking spray
- 10 oz. cooked elbow macaroni (or shells, spiral pasta, etc.)
- 1/2 stick butter, cubed
- 1 (12 oz.) can evaporated milk
- 1 1/2 cups whole milk
- 3 cups cheddar cheese, grated
- 1 cup parmesan cheese, grated, plus extra for garnish
- 1 cup romano cheese, grated
- 1 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon nutmeg

Tofu Scramble

- 1 red pepper, diced
- 1 small zucchini, diced
