Veggie "Beef" and Noodles

Ingredients

  • 1 x8 oz pkg of vegetarian "Beef" style strips
  • 1/2 medium onion, chopped
  • 1 Tbsp olive oil
  • 10 oz low sodium veggie "Beef" style broth
  • 8 oz uncooked egg noodles
  • 4 cups water
  • salt and black pepper to taste

Preparation

Step 1

Cut the "beef" style strips into bite size pieces.

In a 4 quart pot, heat olive oil. Add onion and cook until onions are translucent. Add "beef" strips and brown for a couple of minutes while stirring. Add broth and bring to a boil.

Add 4 cups of water. Increase heat to high and bring to a boil. Add egg noodles. Boil for 10 minutes, stirring occasionally to make sure all noodles get cooked.

After 10 minutes remove from heat, cover and let stand for 15 minutes to allow noodles to absorb more liquid.

Serve with vegetables.
