Crockpot Meatballs (with bread crumbs)

- MEATBALL INGREDIENTS:

- 1 lg. onion, chopped
- 2 ribs celery, chopped
- 1 lg. clove garlic, chopped
- 2 tbsp. olive oil
- 1 can (28 oz.) crushed tomatoes
- 1 can (14 oz.) crushed tomatoes
- 1 can (16 oz.) tomato paste
- Seasonings to taste - salt, pepper, parsley, Italian seasoning and bay leaf
- 1 lb. lean ground beef
- 4 eggs
- Seasoned bread crumbs
- 1 clove garlic, chopped
- Grated Parmesan cheese (2 tbsp. or more to taste)
- Salt, pepper, parsley and Italian seasoning to taste
Gazpacho

Core and seed tomatoes. Peel and seed cucumbers
- 5 very ripe beefsteak tomatoes, plus 1 cut into 1/4 inch cubes set aside
- 2 large english cucumbers, plus 1 cut into 1/4 inch cubes set aside
- 2 red bell peppers, plus 1 cut into 1/4 inch cubes set aside
- 2 jalapenos, seeded and stemmed
- 1 small red onion
- 2 slices day old white bread, plus three slices cut into 1/2 inch croutons and toasted in olive oil in pan until deep golden brown
- 3 cloves of garlic, peeled
- 1 cup ice plus 1/2 cup water
- 4 tbsp red wine vinegar
- 1/2 cup EVOO, plus more to drizzle
- Salt and pepper
- Dash of balsamic vinegar

- 7 oz. (14 Tbs.) unsalted butter, melted and cooled to just warm

- 1/2 tsp. table salt
- 9-1/2 oz. (2 cups plus 2 Tbs.) unbleached all-purpose flour
- Tip: For the best results, measure your flour by weight instead of volume. (1 cup of all-purpose flour equals 4-1/2 oz.) If you don’t have a scale, be sure to use the proper technique when filling your measuring cups.
