Egg fried rice

Ken Hom prepares a classic Chinese favourite in this tasty and tempting side dish of egg fried rice
- 100 g fresh peas, or frozen
- 2 eggs, beaten
- 2 tsp sesame oil
- 2 tbsp groundnut oil
- 300 g long grain rice, cooked and drained
- 50 g cooked ham, finely diced
- 2 tsp salt
- 0.5 tsp freshly ground black pepper
- 3 tbsp spring onions, white part only, finely chopped
- 100 g bean sprouts
Deep Fried Masala chicken with coriander basil dip

Method 1. For the spiced coating: put all the ingredients in a food processor and process to a fine, smooth paste
- For the spiced coating
- 200 g plain flour
- 2 green chillies
- 1-1 1/2 tbsp chopped coriander leaves
- 1 heaped tsp ground chilli
- 1 tsp ground white pepper
- 1 heaped tsp chaat masala,

- 1 1/2 tsp salt
- For the chicken
- 250 g chicken breast fillets
- 1/2 tsp ground turmeric
- 1 tsp ground chillies
- 2 cloves garlic, crushed
- 1 green chilli, finely chopped
- 1 egg, lightly beaten oil, for deep-frying
- For the coriander and basil dip
- 1 small bunch fresh coriander, with stalks
- 15-20 leaves Thai sweet basil
- 15-20 leaves purple basil
- 2 cloves garlic
- 5 cm piece ginger, scraped and coarsely chopped
- 3-4 bird's eye chillies, or to taste
- 1 lime, juice only
- 1-2 tsp sugar, or more to taste
- 1 tsp white vinegar
- 100 ml vegetable oil, optional

- 2-3 tbsp Greek yogurt
Ultimate quiche Lorraine

# For the pastry, put the flour, butter, egg yolk and 4 tsp cold water into a food processor
- FOR THE PASTRY
- * 175g plain flour
- * 100g cold butter , cut into pieces
- * 1 egg yolk
- FOR THE FILLING
- * 200g pack lardon , unsmoked or smoked
- * 50g Gruyère
- * 200ml carton crème fraîche
- * 200ml double cream
- * 3 eggs , well beaten
- * pinch ground nutmeg
Cloud-Like Biscuits

Preheat oven to 450 degrees
- 1/2 tsp butter
- 2 cups flour
- 3/4 tsp sea salt
- 1/4 tsp baking soda
- 2 tsp baking powder
- (I use Bakewell's which I order from the King Arthur Catalog)
- 5 1/2 tblsp cold butter
- 1 cup buttermilk
Coconut Macaroons (Favourite)

Beat egg whites and salt till soft peaks form
- 1/2 c. egg whites (4 - 5 egg whites)
- 1/4 tsp. salt
- 1 1/4 c. sugar
- 1/2 tsp. vanilla
- 1 1/2 c. moist shredded coconut
Sweet Pepper Jelly

This recipe makes a fiery golden, translucent jelly with colourful suspended fruit and vegetables
- 1/3 cup (75 ml) finely sliced dried apricots
- 3/4 cup (175 ml) white or white wine vinegar
- 1/4 cup (50 ml) finely diced red onion
- 1/4 cup (50 ml) finely diced seeded sweet red pepper
- 1/4 cup (50 ml) finely diced green chili peppers, including seeds (hot or sweet)
- 3 cups (750 ml) granulated sugar
- 1 pouch (85 ml) BERNARDIN® Liquid Pectin
GRILLED ROMAINE SALAD WITH SPICY CAESAR DRESSING

- 1 tablespoon prepared mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon freshly ground pepper
- 1 teaspoon pureed canned chipotles
- 1 teaspoon Worcestershire sauce
- Few drops of hot pepper sauce
- 1 tablespoon fresh lime juice
- 1 teaspoon capers
- 5 anchovy fillets
- 8 cloves garlic 1 cup olive oil
- 2 tablespoon red wine vinegar
- Salt and freshly ground pepper
- 24 romaine leaves 3 tablespoons olive oil

Cilantro Pesto Chicken Tenders

To make the marinade: In a food processor finely chop the walnuts and garlic

- 2 tablespoons coarsely chopped walnuts
- 2 medium garlic cloves
- 1-1/2 cups loosely packed fresh cilantro leaves and tender stems
- 1/2 cup loosely packed fresh Italian parsley leaves and tender stems
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup extra-virgin olive oil
- 2 pounds chicken breast tenders
- 1 lime, cut into wedges
Mini Fritatta

Preheat the oven to 375 degrees
- Nonstick cooking spray, oil, or butter (I use Earth Balance)
- 8 large eggs
- 1/2 cup milk product
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
- 4 ounces thinly sliced ham or smoked turkey, finely chopped
- 1/3 cup freshly grated Parmesan or substitute
- 2 tablespoons chopped fresh Italian parsley leaves
A Sun-Dried Tomato Ketchup

Bring the water to a boil, add the tomatoes, and cover for 30 minutes to soften
- 1 cup sun-dried tomatoes (not packed in oil)
- 4 cups water
- 2 tablespoons olive oil
- 1 1 /2 cups chopped yellow onion (roughly 2 medium)
- 5 cloves garlic, smashed and minced
- 1/4 cup apple cider vinegar
- 3 tablespoons dark brown sugar
- 1/4 cup tomato paste
- 1 teaspoon salt
