  • 100 g fresh peas, or frozen
  • 2 eggs, beaten
  • 2 tsp sesame oil
  • 2 tbsp groundnut oil
  • 300 g long grain rice, cooked and drained
  • 50 g cooked ham, finely diced
  • 2 tsp salt
  • 0.5 tsp freshly ground black pepper
  • 3 tbsp spring onions, white part only, finely chopped
  • 100 g bean sprouts

Method 1. For the spiced coating: put all the ingredients in a food processor and process to a fine, smooth paste

  • For the spiced coating
  • 200 g plain flour
  • 2 green chillies
  • 1-1 1/2 tbsp chopped coriander leaves
  • 1 heaped tsp ground chilli
  • 1 tsp ground white pepper
  • 1 heaped tsp chaat masala,

  • 1 1/2 tsp salt
  • For the chicken
  • 250 g chicken breast fillets
  • 1/2 tsp ground turmeric
  • 1 tsp ground chillies
  • 2 cloves garlic, crushed
  • 1 green chilli, finely chopped
  • 1 egg, lightly beaten oil, for deep-frying
  • For the coriander and basil dip
  • 1 small bunch fresh coriander, with stalks
  • 15-20 leaves Thai sweet basil
  • 15-20 leaves purple basil
  • 2 cloves garlic
  • 5 cm piece ginger, scraped and coarsely chopped
  • 3-4 bird's eye chillies, or to taste
  • 1 lime, juice only
  • 1-2 tsp sugar, or more to taste
  • 1 tsp white vinegar
  • 100 ml vegetable oil, optional

  • 2-3 tbsp Greek yogurt
