Bacon Cheddar Muffins

Preheat oven to 375 degrees
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 2 cups shredded sharp cheddar cheese
- 2-3 slices cooked bacon, chopped (or 1-2.5 ounce bag of store-bought real bacon bits)
- 1 tablespoon chopped fresh chives
- 1 cup (2 sticks) unsalted butter, melted
- 1 cup (8 oz.) sour cream
- 1/2 cup milk
- 1/8 teaspoon kosher salt
- 1/8 cayenne pepper
Almond & Pistachio Cake

1. Preheat oven to 180°C
- 250 g butter, softened (I think you can cut back on the butter a bit ... maybe to 200 to 220g?)
- 200 g caster sugar
- 4 eggs, beaten
- 120 g ground almonds
- 100 g ground pistachio nuts
- 50 g plain flour
- 1 - 1 tsp baking powder
- - Grated zest of 2 unwaxed lemons
- For the pistachio topping
- 1 or 2 tbsp honey, basically enough to coat the pistachios
- - A pinch of cinnamon
- A drop or 2 of rosewater
- 60 - 60g pistachio nuts (or more, if you like), roughly chopped
Super Moist Banana Bread, Two Ways

Directions: Cream butter, brown sugar, and sugar
- For basic vanilla-almond version:
- 6 Tbsp butter, softened
- 1 c brown sugar
- 1/2 c sugar
- 3 ripe bananas, mashed well
- 1 c sour cream or plain yogurt (I used light)
- 1 tsp vanilla
- 1 tsp almond flavoring
- 2 eggs
- 1/4 tsp salt
- 2 tsp baking soda
- 2 1/4 c flour
- For Cinnamon-Nut version:
- Ingredients:
- 6 Tbsp butter, softened
- 1 c brown sugar
- 1/2 c sugar
- 3 ripe bananas, mashed well
- 1 c sour cream or plain yogurt (I used light)
- 1 tsp vanilla
- 1 tsp cinnamon
- 2 eggs
- 1/4 tsp salt

- 2 1/4 c flour

- 12 medium chicken thighs, skinned and scored with a sharp knife
- 4-5 tbsp vegetable oil
- for the marinade
- 200 g yoghurt
- 6 cloves of garlic, peeled and chopped
- A piece of root ginger weighing about 30g, peeled and grated
- two -thirds tsp chilli powder
- half tsp ground coriander
- 1 tsp ground cumin
- half tsp garam masala
- half tsp salt
- half tbsp lime juice
- for the makhani sauce
- 500 g tomatoes, skinned, seeded and chopped, or a 400g can of tomatoes
- half tbsp dried fenugreek leaves
- half tsp paprika
- half tsp garam masala
- 100 g butter
- 40 ml single cream
- 1 tbsp chopped coriander
- Salt and ground black pepper
Mushroom butter on toast

1. Melt 50g butter in a pan and gently fry the onion until softened
- * 250g pack butter , softened
- * 1 onion , very finely chopped
- * 3 garlic cloves , finely chopped
- * 2 thyme sprigs, plus extra to serve
- * 30g pack dried porcini mushrooms, soaked, drained and finely chopped
- * 250g pack chestnut mushrooms , finely chopped
- * 2 tbsp brandy
- * juice ½ lemon
- * small handful each parsley and tarragon, finely chopped
- * toasted bread and salad leaves, to serve
