Maple Mustard Sauce

To make sauce, melt butter over medium heat in a small saucepan
- 1 tbsp (15 mL) butter
- 1 small onion, finely chopped
- 1 tbsp (15 mL) all-purpose flour
- 1 cup (250 mL) chicken stock
- 2 tbsp (25 mL) Dijon mustard
- 2 tbsp (25 mL) pure maple syrup
- 1 tbsp (15 mL) soy sauce
- Salt and freshly ground pepper
Creamy Masala Chicken

- 4 * 4 boneless, skinless chicken breasts , cubed
- 3 * 3cm piece fresh root ginger , peeled and chopped
- 2 * 2 garlic clove , chopped
- 1 * 1 tsp mild chilli powder
- 2 * 2 tbsp fresh coriander , chopped
- * juice of 1 lime
- 2 * 2 tbsp vegetable oil
- 1 * 1 onion
- 1 * 1 red chilli
- 1 * 1 tsp ground turmeric
- 284 * 284ml carton double cream
- * juice of ½ lemon
- * basmati rice and naan bread, to serve
Pumpkin Mochi Cake

Preheat oven to 350. Grease 9x13 pan
- Makes one 9x13 pan
- 1 lb box mochiko (sweet rice flour - equivalent to 3 cups)
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 tablespoon cinnamon
- 2 teaspoons ginger
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 stick of butter (1/2 cup) melted
- 14 oz can of pumpkin puree
- 12 oz can evaporated milk
- 4 eggs
- 1 tablespoon vanilla extract

- 375 * 375g courgettes , coarsely grated
- * ½ tsp curry powder
- 1 * 1 fresh red chilli , seeded and finely chopped
- 1 * 1 garlic clove , finely chopped
- 2 * 2 spring onions , finely chopped
- * ½ tsp fresh thyme leaves
- 1 * 1 egg , lightly beaten
- 75 * 75ml milk
- 140 * 140g plain flour
- 1 * 1½ tsp baking powder
- FOR THE TOPPING
- 4 * 4 tbsp of your favourite chutney or spicy tomato dip
- 125 * 125g pack mozzarella , cut into small cubes

Ad Hoc @ Home Brownies

I slightly adapted them by adding in some espresso powder and cutting back just slightly on the sugar
- 3/4 cup all-purpose flour
- 1 cup unsweetened alkalized cocoa powder (or Dutch processed. I found some at Williams and Sonoma)
- 1 tsp kosher salt
- 3 sticks unsalted butter, cut into 1 tbsp chunks
- 3 large eggs
- 1 1/2 cup granulated sugar (recipe calls for 1 3/4)
- 1/2 tsp vanilla paste or extract
- 6 oz. 61-64% chocolate (I used Scharffen Berger)
- 1 1/2 t espresso powder (optional)
