Twice Baked Buffalo Potatoes

Preheat the oven to 400F. Place the potatoes on the rack in the centre of the oven and bake for 30 minutes
- Serves 10
- 5 large russet potatoes, washed and dried
- 3 tbsp. unsalted Butter
- 1/3 cup sour cream
- 2 green onions, chopped
- 1/2 cup sharp cheddar cheese, grated
- 1/3 cup Gorgonzola or blue cheese crumbles
- 1/3 cup buffalo sauce
- salt and pepper, to taste
