Chipotle Chicken

In a blender, combine the chiles, onion, jalapeno, cilantro and lime juice
- 1 can (7 ounces) chipotle chiles in adobo sauce
- 1 medium-size white onion, chopped
- 1/2 small jalapeno, seeds removed, chopped (add more to taste)
- 1/2 cup chopped, fresh cilantro
- Juice of 4 limes
- Kosher salt
- 2 to 3 cups mayonnaise
- 2 whole chickens, cut into pieces (or substitute 12 chicken thighs)
- 1 whole lime, cut into wedges, for garnish
Zucchini Bread with Dried Cranberries & Vanilla Bean Glaze

Make the zucchini bread: Preheat the oven to 350 degrees F
- For the Glaze:
- 1 stick unsalted butter, melted and cooled (or 1/2 cup vegetable oil), plus more for the pan
- 1 1/4 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg
- 1 cup dried cranberries
- 2 large eggs
- 1/2 cup plain yogurt or sour cream
- 1 teaspoon vanilla extract
- 1 teaspoon grated orange zest (optional)
- 1 cup shredded zucchini, squeezed dry
- 1 cup confectioners' sugar
- 1 tablespoon milk
- 1 vanilla bean, split lengthwise and seeds scraped
Brownie Roll-Out Cookies

Whisk the flour, cocoa, salt and baking powder in a bowl, and set aside
- 3 3 3 cups all-purpose flour, plus more for counter
- 2/3 2/3 2/3 cup unsweetened cocoa
- 3/4 3/4 3/4 tsp. table salt
- 1/2 1/2 1/2 tsp. baking powder
- 16 16 16 Tbs. (2 sticks) unsalted butter, softened
- 1 1/2 1 1/2 1/2 cups sugar
- 2 2 2 large eggs
- 1 1 to 350 vanilla extractPreheat oven to 350 degrees.
- Roll out the cookie dough on a floured counter. Cut into desired shapes, brushing extra deposits of flour off the top. (It does disappear once baked, though, so don’t overly fret if they go into the oven looking white.)
- 65 1 1/2 1/4-inch-thick 1/2 inches wide from 1/4-inch-thick dough
Avocado Chicken Salad

Mix all ingredients in a large bowl
- 2 cups shredded chicken
- 1 avocado
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp lime juice
- 1 tsp fresh cilantro
- 1/2 cup mayo

Preheat oven to 350 degrees F
- 1/4 c unsalted butter
- 1/2 c dark brown sugar
- 1/4 c granulated sugar
- 1/4 c canola oil
- 1 egg
- 1 tsp vanilla extract
- 1/2 c all-purpose flour
- 1/2 c whole-wheat pastry flour
- 1/4 c unsweetened cocoa powder (not Dutch processed)
- 1/3 c coarsely chopped favorite dark chocolate
- 1/3 c coarsely chopped milk chocolate
- 2/3 c chopped pecans (optional)
Noodles with Spicy Tomato Sauce

Toast spaghetti in a skillet with olive oil over low heat, 4 minutes
- 8 oz. broken spaghetti
- Olive oil
- 1 c. chopped scallions
- 2 tsp ground cumin
- 1 &1/2 c. chicken broth
- 14 oz. can diced tomatoes with chilies
- Salt
- Chopped cilantro
- Cotija cheese
Creamy Rosemary Wild Rice Soup

1. In a large saucepan over medium-high, heat the olive oil
- 1 tablespoon olive oil
- 8 ounces boneless, skinless chicken breast, cubed
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 2 stalks celery, diced
- 1 large carrot, peeled and diced
- 1 large parsnip, peeled and diced
- 3 tablespoons minced fresh rosemary
- 1 quart (4 cups) low-sodium chicken broth
- 1/2 cup wild rice
- 2 tablespoons instant flour (such as Wondra)
- 2 cups fat-free half-and-half
- Salt and ground black pepper, to taste
Vegetable, Bacon, and Quinoa Quiche

Preheat oven to 350 degrees F
- Nonstick cooking spray
- 1/2 cup quinoa
- 8 ounces sliced fresh mushrooms
- 1 cup loosely packed, coarsely chopped fresh spinach
- 1/2 cup sliced, halved leeks
- 4 1/2-ounce slices applewood smoked bacon, crisp cooked and coarsely crumbled (32 slices per pound)
- 4 eggs, lightly beaten
- 1 cup refrigerated or frozen egg product, thawed
- 1 12 ounce can evaporated fat-free milk
- 2 ounces Gruyere or Havarti cheese, shredded (1/2 cup)
- 1/2 teaspoon salt
- 1/8 teaspoon ground black pepper
