Chocolate-Pistachio Cookies

1. In a large bowl, beat butter with an electric mixer on medium to high speed about 30 seconds
- 3/4 cup butter, softened
- 1 1/3 cups all-purpose flour
- 1/2 cup packed brown sugar
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon ground cinnamon
- 3/4 cup miniature semisweet chocolate pieces
- 1/2 cup miniature semisweet chocolate pieces
- 1 teaspoon shortening
- 1/2 cup finely chopped pistachios
Smoky Wild Rice Casserole

Preheat oven to 350 degrees F
- 1 6 ounce package or two 4.3-ounce packages long grain and wild rice mix
- 1 medium fennel bulb
- 1 13 ounce package smoked turkey sausage, chopped
- 2 medium carrots, cut into thin bite-size strips
- 1/2 cup chopped onion (1 medium)
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1/4 cup light sour cream
- 2 tablespoons Dijon-style mustard
- 3 cups fat-free milk
- 12 ounces fresh asparagus, trimmed and cut into 2-inch lengths
Brussels Sprouts with Pistachios, Cranberries & Parmesan

1.Cut each Brussels sprout in half through the root, then slice thinly
- 1 1/4 lb. Brussels sprouts
- 2 tsp olive oil, divided
- 1/2 yellow onion, diced
- 1/3 cup shelled pistachios, chopped
- 1/3 cup dried cranberries
- 1/3 cup grated Parmesan cheese
- 1/2 tsp ground pepper
- Salt to taste
Rhubarb-Strawberry Crisp

1.Position a rack in the middle of the oven, and preheat to 350 degrees F
- Filling:
- 6 medium stalks rhubarb, cut into 1/2-inch pieces
- 2 cups strawberries, hulled and halved lengthwise
- 1/2 cup sugar
- Topping:
- 1 cup all-purpose flour
- 1/2 cup old-fashioned rolled oats
- 1/3 cup sugar
- 1/3 cup firmly packed golden brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, melted
Easy Cheesecake

Preheat oven to 350°. In a medium bowl, combine the graham cracker crumbs, sugar, CINNAMON and melted butter
- Crust (or 2 ready-made graham cracker crusts):
- 2 pkgs. graham crackers
- (20 whole crackers) crushed
- 1/3 Cup sugar
- 1 tsp. PENZEYS CINNAMON
- 1/2 Cup (1 stick) butter, melted
- Filling:
- 1 Cup sugar
- 1 TB. plus 1 tsp. corn starch
- 1/2 Cup (1 stick) butter, softened
- 2 eggs
- 2 8-oz. pkgs. cream cheese, softened
- 8 oz. sour cream
- 1 tsp. PURE VANILLA EXTRACT
Chicken Enchilada Stuffed Peppers

Preheat oven to 350 degrees
- 5 large bell peppers, (I used a mix of green and red pepper)
- 2 tablespoons olive oil, divided
- 1 pound chicken breasts or thighs, cut into 1 inch pieces
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups cooked rice (you can use either brown or white rice)
- 1 cup frozen corn (no need to thaw)
- 1 (14.5 ounce can) black beans, drained and rinsed
- 1 (10 ounce can) enchilada sauce
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon chipotle chili powder
- 1 tablespoon lime juice

- 3 tablespoons EVOO
- 2 medium carrots, peeled and chopped
- 2 ribs celery, chopped
- 1 large onion, chopped
- 1 red bell pepper, chopped
- 6 cloves garlic, chopped
- 1 jalapeno, chopped
- 5 15 1/2 ounce cans black beans, drained and rinsed
- 4 cups low-sodium chicken or vegetable broth
- Optional: 4 cups roasted cubed sweet potatoes
- 1 cup chopped cilantro
