Chipotle Ketchup

In a saucepan, combine all of the ingredients
- 1 cup tomato sauce
- 3 tablespoons pureed chipotle chiles in adobo sauce
- 2 tablespoons light brown sugar
- 2 tablespoons vinegar
- 1 tablespoon worcestershire sauce
All-Purpose Marinade

Combine all of the ingredients in a zip-top bag or container with tight lid
- 1 Cup teriyaki sauce (If your jar of teriyaki sauce is only 3/4 cup, use 1/4 lower sodium soy sauce to make up the difference)
- 1/3 Cup sesame oil
- 1/4 Cup rice wine vinegar
- 1/4 Cup honey
- 1/2 tsp. CHINESE FIVE SPICE POWDER
- 1 tsp. CRACKED GINGER (CRYSTALLIZED GINGER BITS would be a nice substitution, use 1 TB.)
- 1-2 tsp. GRANULATED GARLIC POWDER (recipe calls for 2 tsp. which is a lot using our PENZEYS GARLIC)
- Combine all of the ingredients in a zip-top bag or container with tight lid. Add your meat of choice and seal. Slosh the bag around a bit and let marinate in the refrigerator for at least 6 hours.
Unstuffed Cabbage Roll Casserole

Preheat oven to 350 degrees
- 1.5 lbs. ground beef
- 3/4 c. uncooked white rice
- 1 onion, chopped
- Spices to taste
- 2 egg whites
- 2.5 c. ginger ale
- 1.5 c. ketchup
- 8 oz. can tomato sauce
- 1/2 head (8 c.) grated cabbage
Grilled Corn with Sour Cream and Cotija Cheese

Wrap each ear of corn with a 2-inch band of foil to keep husks in place
- 4 ears corn, silks removed, husks left attached
- 1/4 cup sour cream
- 1/4 cup crumbled cotija or feta cheese (1 ounce)
- 1/2 teaspoon paprika
- Coarse salt and ground pepper
Chipotle's Salad Dressing

Mix together in a bowl or blender all ingredients except salad oil
- 1/2 Cup Red Wine Vinegar
- 1/3 Cup Honey
- 1 Tablespoon Fresh Oregano
- 1 Tablespoon Salt
- 1 teaspoon Black Pepper
- 1 minced Chipotle Pepper in Adobo sauce roughly 1 Tablespoon
- 1 1/2 Cup Salad Oil
Ultra-Crispy Roast Potatoes

Adjust oven racks to lower and upper position and preheat oven to 500°F
- 4 1/2 pounds russet potatoes, (For creamier potatoes with a slightly less crisp crust, substitute Yukon Gold potatoes for russets). Rinsed, peel if desired, and cut into 2-inch chunks
- 1 tablespoon white vinegar
- Kosher salt
- 1/4 cup duck fat (Duck fat, turkey fat, or chicken fat will give the best results, but bacon fat or olive oil will work well).
- Freshly ground black pepper
- 12 sprigs thyme
Chocolate Creamy Frosting

In a medium bowl, sift together the confectioners' sugar and cocoa, and set aside
- 2 3/4 cups confectioners' sugar
- 6 tablespoons unsweetened cocoa powder
- 6 tablespoons butter
- 5 tablespoons evaporated milk
- 1 teaspoon vanilla extract
Cheese Shell Tacos

To make the shells.... Place Parchment paper on a cookie sheet, spray with cooking spray
- Round provolone cheese slices
- Mexican spices
- Garlic powder
- Taco fillings, as desired
Quick Guacamole

In bowl, mix all ingredients until just blended
- 3-4 avocados, chopped
- 1-2 garlic cloves, minced
- 1/3 c. medium salsa
- 1/4 c. fresh cilantro, chopped
- 1 Tbs. lime juice
- Salt to taste
- Hot sauce to taste
Chewy Flourless Chocolate Cookies

Preheat oven to 300F. Mix together sugar, cocoa, cornstarch and salt
- 1 3/4 cups powdered sugar
- 1/2 cup Dutch process cocoa (made with alkali)
- 2 teaspoons cornstarch
- 1/4 teaspoon salt
- 2 egg whites
- 1 cup coarsely chopped pecans or walnuts, toasted
