Brown Sugar Applesauce Cookies

Beat together the brown sugar, shortening, applesauce and egg
- Frosting:
- 1 Cup packed brown sugar
- 1/2 Cup shortening
- 1/2 Cup applesauce
- 1 egg
- 13/4 Cups flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. CINNAMON
- 1/4 tsp. GROUND CLOVES
- 1/4 Cup butter (1/2 stick)
- 2 Cups powdered sugar
- 1 tsp. PURE VANILLA EXTRACT
- 1-2 TB. milk
Bacon Explosion Roast

Preheat smoker to 225 to 250 degrees F (110 to 120 degrees C)
- 2 pounds thick-cut bacon, divided
- 1 tablespoon barbeque spice rub, divided
- 2 pounds bulk pork sausage
- 1 cup finely shredded Cheddar cheese
- 2 green onions, thinly sliced
- 4 cloves garlic, minced
- 1 (18 ounce) bottle barbeque sauce
Cowboy Beans

In large pan, cook bacon until crispy & remove
- 3 strips bacon, diced
- 1 medium onion, chopped
- Seasonings to taste
- 2 15 oz. cans baked beans
- 1 can black beans, drained & rinsed
- 1 c. corn or kernels from 2-3 ears
Cabbage Fat-Burning Soup

Place carrots, onions, tomatoes, cabbage, green beans, peppers, and celery in a large pot
- 5 carrots, chopped
- 3 onions, chopped
- 2 (16 ounce) cans whole peeled tomatoes, with liquid
- 1 large head cabbage, chopped
- 1 (1 ounce) envelope dry onion soup mix
- 1 (15 ounce) can cut green beans, drained
- 2 quarts tomato juice
- 2 green bell peppers, diced
- 10 stalks celery, chopped
- 1 (14 ounce) can beef broth
Spicy Cucumber Salad

- 1 cup seasoned rice vinegar see savings
- 1 teaspoon crushed red pepper flakes see savings
- 1 tablespoon plus 1 teaspoon finely grated peeled fresh ginger see savings
- 4 pounds seedless cucumbers, halved crosswise see savings
Pumpkin-Cranberry Breakfast Cookies

1. Combine flour, baking soda, ginger and salt in a bowl
- Yield: 2 dozens
- Cook: 12-13 minutes
- 1 1/4 cups whole-wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground ginger or pumpkin pie spice
- 1/2 teaspoon salt
- 2 tablespoons butter
- 1/4 cup canola oil
- 1/3 cup maple syrup
- 1 egg
- 1 teaspoon vanilla extract
- 1/3 cup pumpkin puree (like Libby's)
- 1 cup old-fashioned oats
- 1/2 cup dried cranberries (like Craisins)
- 1/3 cup chopped walnuts
Buffalo Corn Chowder

Heat the oil in a soup pot over medium-high heat
- 1 tablespoon canola oil
- 7 tablespoons butter, including 4 tbsp. softened butter
- 4 medium yukon gold potatoes, chopped into 1/2-inch dice (3/4 lb.)
- 1 small red bell pepper, seeded and chopped
- 2 - 3 small ribs celery, chopped
- 2 carrots, chopped
- 1 onion, chopped
- 1 chile pepper such as fresno or jalapeno, seeded and finely chopped
- 4 cloves garlic, chopped
- Salt and pepper
- 2 tablespoons fresh thyme, chopped
- 6 ears corn, kernels scraped from cobs, or 4-5 cups frozen kernels
- 2 tablespoons flour
- 1 cup lager beer
- 1 quart chicken stock
- 1/4 cup sriracha or hot sauce, such as Frank's RedHot, or more to taste
- 1 cup blue cheese crumbles
- 4 sourdough english muffins
- 1 bunch scallions, sliced on an angle
Red Chile Short Rib Tacos (Bobby Flay)

Preheat the oven to 350 degrees F
- 3 pounds bone-in beef short ribs, fat trimmed
- Kosher salt and freshly ground pepper
- 1/4 cup canola oil
- 3 cups chicken stock
- 2 dried ancho chile peppers, stemmed and seeded
- 2 dried New Mexico chile peppers, stemmed and seeded
- 4 dried cascabel chile peppers, stemmed and seeded
- 1 large Spanish onion, chopped
- 6 cloves garlic, smashed
- 1 cup dry red wine
- 1/2 cup port
- 12 sprigs thyme
- 16 hard corn taco shells
- Cilantro, queso sauce, pickled red onions and green chile relish, for topping (below)

- 1/2 cup flour* (or corn flour, or rice flour, etc)

- 1/2 cup cheddar cheese, grated
- 1/4 cup cream cheese, room temperature
- 2 + jalapeno peppers, diced
- 2 slices bacon, cooked and crumbled (optional)
- 1 teaspoon smoked paprika
- 1 teaspoon coriander, toasted and ground
- 2 green onions, sliced
- 1 handful cilantro, chopped
- 1 lime, zest and juice
- 2 tablespoons oil
