1. MAKE THE SAUCE: In a microwave-safe bowl, cover the chiles with the hot water

- 4 cups shredded cooked chicken

- Vegetable oil for frying

- Hot sauce
- Chipotle Corn Guacamole:
- 1 Tbs olive oil
- 1/4 cup diced red onion
- 1 cup corn kernels ( if canned, drain very well)
- 1 diced canned chipotle pepper packed in adobo sauce
- 3 minced garlic cloves
- 1 Tbs or more of adobo sauce from can
