Chocolate Peanut Pretzel Pizza

Place pizza crust in 9" pie plate
- 1 8" Italian-style prepared pizza crust
- 1/4 c. graham cracker crumbs
- 1/4 c. powdered sugar
- 1/4 c. peanut butter
- 2 Tbs. butter, melted
- 1 c. semisweet chocolate chips, melted & divided
- 1/2 c. coarsely broken pretzels
- 1/4 c. dry roasted nuts
Pumpkin Pie Cupcakes

Preheat oven to 350 degrees
- 1 15 oz can pumpkin puree
- 1/2 cup sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup evaporated milk
- 2/3 cup all purpose flour
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
Green Chile Fried Chicken

1. In a bowl combine sour cream, milk, chile peppers, cilantro, lime juice, garlic, cumin, salt, and black pepper
- 1 8 ounce carton dairy sour cream
- 1/4 cup milk
- 1 4 ounce can diced green chile peppers
- 2 tablespoons snipped fresh cilantro
- 2 tablespoons lime juice
- 1 clove garlic, minced
- 3/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1 2 1/2- 3 pound cut up broiler-fryer chicken, skinned if desired
- 3/4 cup all-purpose flour
- Cooking oil
- Bottled hot pepper sauce (optional)
- Lime wedges (optional)
Spicy Cilantro Queso

Preheat broiler. In bowl, toss cheeses and flour
- 1/2 pound cheddar and monterey jack, shredded
- 4 teaspoons flour
- 2 teaspoons vegetable oil
- 1 onion, finely chopped
- 1/4 cup chopped peppadew or red bell pepper
- 1 jalapeno, finely chopped
- 1/2 cup chopped cilantro
- Tortilla chips
- Lime wedges
Crustless Bacon and Cheese Quiche

HEAT oven to 325ºF. RESERVE 2 Tbsp
- 5 green onions, chopped, divided
- 1 tomato, chopped, divided
- 12 slices OSCAR MAYER Bacon
- 1 cup sliced fresh mushrooms
- 12 eggs
- 1/3 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 1 cup KRAFT 2% Milk Shredded Cheddar Cheese
- 1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
Brussels Sprouts with Maple and Cayenne

Preheat oven to 400 degrees
- 2 pounds brussels sprouts, trimmed and halved lengthwise
- 1 tablespoon plus 1 teaspoon extra-virgin olive oil
- 1/2 c. chopped bacon
- 1 Tablespoon pure maple syrup
- 1/8 teaspoon cayenne pepper
Mexican-Stuffed Bell Peppers

1. Heat oven to 350. Cut three large bell peppers in half and remove seeds
- 1 medium onion, chopped
- 16 oz lean ground turkey or chicken
- 4 garlic cloves, minced
- 1 T chili powder (decrease to 1/2 T if you don't like spicy food)
- 1 T ground cumin
- 16 oz jar salsa (any flavor, but make it something you like.)
- 1 cup cooked rice
- 1 cup shredded low-fat cheddar cheese
- 2 cups baby spinach
- sour cream
- avocado
Grilled Sweet Potatoes

Place potatoes in a large saucepan and cover with water
- 4 large sweet potatoes, cut into 1/2-inch wedges
- 1/2 teaspoon garlic salt
- 1/4 teaspoon pepper
- 2 Tbs butter, melted
Creamy Jalapeno Dip

Throw everything into a blender until smooth
- 1 1/2 cups ranch dressing
- 1/2 cup sour cream
- 1 (4 ounce) can green chilies
- 2-4 fresh jalapenos, retaining more or less seeds depending how hot you like it
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon lime juice
- 1-3 tablespoon fresh cilantro
Vermont Maple Pecan Cookies

Preheat oven to 300F & position racks in upper & lower thirds of oven
- 3 c. old-fashioned oats
- 2 &2/3 c. all-purpose flour
- 1 tsp. salt
- 1 tsp. cinnamon
- 2 c. packed dark brown sugar
- 1 c. (2 sticks) unsalted butter
- 1/2 c. maple syrup
- 2 Tbs. light corn syrup
- 2 tsp. baking soda
- 1/4 c. boiling water
- 1 tsp. vanilla or maple extract
- 2 c. chopped toasted pecans
