- 1 1 package 1 (3.4-ounce) package instant cheesecake pudding, unprepared
- 1 1 1 cup International Delight French Vanilla Creamer (liquid)
- 1 1 1 pound strawberries, hulled and sliced
- 4 4 4 mandarin oranges, peeled and sectioned
- 1 1 can 1 (20-ounce) can pineapple tidbits, drained
- 3 3 3 kiwi, peeled and cut into half moons
- 2 2 2 mangoes, cut into bite size chunks
- 1 1 1 banana, cut into coins
- 1/2 of 1/2 lemon
Crispy Southwest Chicken Wraps

Mix rice or refried beans together with chili powder, cumin and garlic salt
- 1 cup cooked rice, warm or at room temperature or 1 can refried beans
- 1 cup cooked, shredded chicken (or other leftover meat, like shredded pork or beef)
- 1 can black beans, rinsed and drained
- 1 green onion, finely sliced (white and green parts)
- 1/2 red or green pepper, diced
- 1/4 cup fresh cilantro, chopped
- juice of 1 lime
- 1/2 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic salt
- 2 cups shredded cheese (I use a combination of Monterey jack and sharp cheddar)
- Sour cream (optional)
- 6 burrito-sized flour tortillas
Southwestern BBQ Chicken Salad

In a large bowl, combine chicken with bbq sauce
- CHICKEN
- 3 cups pre-cooked rotisserie chicken, shredded
- 1 cup bbq sauce
- SALAD
- 1/2 head iceberg lettuce, shredded
- 1 head romaine lettuce, shredded
- 1/4 red onion, finely diced
- 1/4 cup fresh cilantro, shopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 2 roma tomatoes, seeded and chopped
- 8 ounces any cheese of your choice, cubed (I used cheddar and monterey jack)
- BBQ CILANTRO LIME SALAD DRESSING
- 1 cup mayonnaise
- 2/3 cup milk, use more or less depending on how thick you want the dressing
- 1 tablespoon vinegar
- 2 tablespoons cilantro, finely chopped
- 1/2 lime, juiced
- 1 teaspoon sugar
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground cumin
- 1/2 cup BBQ sauce
Roasted Cauliflower with Dates & Pine Nuts

Preheat the oven to 425 degrees F
- 1 large head cauliflower, cut into florets (about 8 cups)
- Kosher salt and freshly cracked black pepper, to taste
- 4 tablespoons unsalted butter
- 1/3 cup pine nuts
- 1 clove garlic, minced
- 1/2 cup pitted Medjool dates, coarsely chopped
White Cheddar Chicken Pasta

For the chicken: Heat olive oil in a large skillet over medium heat
- For the chicken:
- 1 pound boneless, skinless chicken breasts, trimmed and cut into 1 inch pieces
- 1 tsp dry mustard
- 1 T fresh thyme
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 T olive oil
- For the pasta:
- 1 pound rotini or other short cut pasta
- 2 T butter
- 2 T flour
- 2 cloves garlic, minced
- 1 small onion, finely diced
- 1/4 cup dry white wine
- 1 T Dijon mustard
- 8 oz sharp white cheddar cheese, grated
- 2 cups milk (I used skim milk but mixed in about 2 T heavy cream)
- 1 T fresh thyme
- 1 T fresh oregano
- Crushed red pepper flakes to taste
- Parmesan cheese to taste
Basil Cauliflower Pizza

The key is to bake the crust separately before you add the toppings
- Cauliflower Crust:
- Makes 4 individual pizzas
- 2 eggs
- 2 cups mozzarella cheese
- 2 cups riced cauliflower (grate the cauliflower on a cheese grater)
- 2 garlic cloves, minced
- 1/4 cup fresh julienned basil
- Pizza Toppings:
- 1 cup marinara sauce (1/4 cup per pizza)
- 1 cup sliced mushrooms
- 1 zucchini, thinly sliced
- 1/2 red onion, thinly sliced
Panko-Breaded Chicken

Wash the chicken and pat dry
- 2 4-6 oz. boneless/skinless chicken breasts
- 1/2 tsp. GRANULATED GARLIC POWDER
- 1 tsp. salt free seasoning-PASTA SPRINKLE, SUNNY SPAIN, MURAL OF FLAVOR and TUSCAN SUNSET are all great
- 1 Cup panko bread crumbs
- 1 egg, beaten
- 1/3 Cup canola oil
Jalapeno Popper Grilled Cheese Sandwich

1.Place the peppers on a baking sheet with the cut side facing down
- 2 Jalapeno Peppers, cut in half lengthwise and seeded
- 2 slices Sour Dough Bread
- 1 tablespoon Butter, room temperature
- 2 tablespoons Cream Cheese, room temperature
- 1/2 cup Jack and Cheddar Cheese, shredded
- 1 tablespoon Tortilla Chips, crumbled
Maple-Nut Granola

1. Preheat oven to 275 degrees F
- 5 cups old-fashioned rolled oats
- 1 cup unsweetened coconut chips, (see Ingredient Note) or flakes
- 1/2 cup sliced almonds
- 1/2 cup coarsely chopped pecans
- 1/2 cup light brown sugar
- 1/3 cup unsalted pumpkin seeds
- 1/3 cup unsalted sunflower seeds
- 1/2 cup pure maple syrup
- 1/2 cup water
- 1/4 cup canola oil
- 1/2 cup dried cranberries
- 1/2 cup raisins
Chili Soup

- 2 c. diced onions
- 1 tsp. garlic powder
- 1 & 1/2 lbs. hamburger
- 1 16 oz. can diced tomatoes
- 2 tsp. salt
- 1/8 tsp. allspice
- Pinch cloves
- 3 c. tomato or vegetable juice
- 1 can beef broth
- 1 16 oz. can kidney or black beans
- 1 tsp. red pepper
- 1/4 tsp. cumin
- 1 c. broken spaghetti or small shell pasta
- Grated Parmesan cheese
