LENTIL****French Lentil Rice Soup

This is good and tasty and healthy, although rather ugly to look at
- 3 servings
- 3 cups chicken broth
- 1/2 cup Puy or other french lentils, picked over and rinsed
- 1 medium carrots, peeled and finely diced
- 1/2 small onion, finely chopped
- 1 celery stalks, finely diced
- 1 1/2 tablespoons uncooked arborio rice
- 1 clove minced garlic
- 1/2 teaspoon herbs de Provence or dried thyme
- salt and freshly ground black pepper, to taste
CAESAR****Baby Kale Caesar with Buttermilk Dressing and Chicken or Flank Steak

- 1 container (5 ounces) baby kale (I used about 4/5ths)
- 4 ounces poached chicken, shredded or
- 6 ounces (1/2 recipe) Grilled Beef Tagliata
- 1/2 cup olive-oil croutons
- 4 slices microwave bacon
- Creamy Buttermilk Dressing:
- 2 tablespoons buttermilk
- 1 tablespoon fresh lemon juice
- 1 tablespoon Hellmann's light
- 1/2 tablespoon Dijon mustard
- 1/2 teaspoon Worcestershire sauce
- 1 teaspoon anchovy paste
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 1 tablespoon best extra-virgin olive oil
- 2 tablespoons grated parmigiano reggiano
- 20 grams shaved parmigiano reggiano or manchego or combination
BARLEY****Braised barley with lemon and spices - 3 Points

I liked this very much. It was easy and fuss-free
- Serves 2, with leftovers
- 1 cup chicken broth
- 6 tbsp. pot barley
- 1 shallot, minced
- 1/2 piece preserved lemon, rinsed and chopped - Optional
- 1 tbsp lemon juice - optional
- 1 tbsp. EVOO
- 2 - 3 sprigs fresh thyme or 1/2 tsp dried
- 1 clove garlic, minced
- 1 pinch chilli flakes or Pepper d'Espelette
QUINOA-Chickpea Bajane

Bajane is a Provençal term for the midday meal
- Quinoa:
- 2 teaspoons extra-virgin olive oil
- 1 garlic clove, minced
- 1 cup organic vegetable broth
- 1 cup water
- 1 cup uncooked quinoa
- 1 1/2 teaspoons chopped fresh thyme
- 1/4 teaspoon salt
- Chickpea mixture:
- 2 teaspoons extra-virgin olive oil, divided
- 2 cups thinly sliced leek (about 1 large)
- 4 garlic cloves, chopped
- 2 1/2 cups sliced fennel bulb (about 1 large)
- 1 3/4 cups (1/4-inch-thick) slices carrot (about 3/4 pound)
- 1/2 teaspoon fennel seeds
- 1/2 cup white wine
- 1 cup organic vegetable broth
- 4 teaspoons chopped fresh thyme, divided
- 1 (14 1/2-ounce) can no-salt-added chickpeas (garbanzo beans), rinsed and drained
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper

- 1 onion, chopped
- 1 tsp turmeric
- 9 oz/250g red lentils
- 1 oz/25g grated fresh ginger
- Small bunch of coriander, chopped
- Squeeze of lime juice
- Small red chilli, deseeded and chopped
PICKEREL****Pickerel in Brown Butter Sauce

- 2 tablespoons flour
- 2 tablespoons cornmeal
- salt and freshly ground pepper to taste
- pinch of chili powder or harissa powder
- 1/4 teaspoon paprika
- 1/2 lb. pickerel fillets
- 2 tablespoons olive/canola oil blend
- 2 tablespoons unsalted butter
- zest and juice of one lemon
- 2 tablespoons fresh parsley, chopped
GROUND TURKEY-Turkey Taco Bowls with Cilantro Lime Rice

for the cilantro lime rice: Combine rice, water, salt, and bay leaf and cook on one cycle, white rice
- for the cilantro lime rice:
- 1 c. long grain white rice
- 2 c. water
- 1 tsp. kosher salt
- 1 bay leaf
- 1 T. freshly squeezed lime juice
- 2 T. finely chopped fresh cilantro
- for the turkey taco mixture:
- 1 lb. ground turkey (or ground beef or chicken)
- 3-6 tablespoons homemade Taco Seasoning
- 1/3 c. water
- salt and pepper, if desired
- other goodies and mix-ins...pick and choose what you like:
- black beans
- shredded cheeses
- lettuce, finely chopped
- tomatoes, diced
- bell peppers (any color you like), diced
- onion, diced
- avocado, diced
- cilantro, chopped
- fresh lime wedges for squeezing over it all...
- and optional condiments:
- fresh pico
- salsa
- taco sauce
- Honey and Chipotle Vinaigrette
- Zesty Sweet Corn Relish
- sour cream
- guacamole
YOGURT*****Cilantro Garlic Yogurt Sauce

- 3 tbsp. finely chopped cilantro (or mint or chives)
- 1 tbsp. lemon juice

- 1/2 rice cooker cup brown basmati
- 1/2 tablespoon olive, coconut or grape seed oil
- 1/2 red onion, thinly sliced
- 1/2 tablespoon ginger, grated or finely chopped (I used bottled) this isn't too much
- 1/2 tablespoon garlic, finely chopped (I used bottled) this isn't too much
- 1/4 tablespoon fenugreek seeds
- 1/2 tablespoon cumin seeds
- 1/4 teaspoon dried rosemary
- 1/4 tablespoon garam masala
- 1 bay leaf
- 1/4 teaspoon dried oregano
- 1/4 teaspoon turmeric
- 1/4 teaspoon salt
- 1 tablespoon tamarind pulp (optional) didn't use
- 1/3 cup fire-roasted tomatoes
- 1/2 cup diced sweet potato (cut the same size as the beans) (Optional)
- 1/3 cup chicken broth
- 1 1/3 cup garbanzo beans, drained but not rinsed
- 1 small seedless orange, halved and cut in supremes (Optional)

VINAIGRETTE****Latholemono - Greek Lemon Oil Sauce

- 1 large clove of Garlic
- 1 teaspoon Dried Oregano
- 1/2 teaspoon Kosher Salt
- 1/4 teaspoon Coarse Ground Black Pepper
- 1/4 cup freshly squeezed Lemon Juice
- 1/2 cup Olive Oil
