- PANKO TOPPING:
- 1/4 cup heavy whipping cream or creme fraiche
- 1 1/2 tbsp. milk or chicken stock
- 1 Tbsp lemon juice
- 3.5 oz. angel hair pasta
- Salt and black pepper
- pinch of hot pepper flakes
- 6 oz. raw or cooked medium shrimp, peeled and deveined and chopped into bite-sized pieces
- 1 tsp olive oil
- 1 tsp butter
- 4 tablespoons panko
- 1 clove of garlic, minced or finely chopped
- grated zest of one lemon
- 2 tablespoons parsley, chopped
- 2 tablespoons grated parmesan

* Coat a large nonstick skillet with cooking spray and heat over medium-high heat
- 3 servings
- 1 spray(s) cooking spray
- 3/4 pound Chicken fingers
- 1/4 tsp table salt
- 1/4 tsp paprika
- 1/2 tsp minced garlic
- 1 Tbsp Becel buttery
- 2 tsp hot pepper sauce, or to taste
- 1/4 cup fat-free blue cheese or ranch dressing

09/08/15 - Good for both, I served it with chicken satay skewers with peanut sauce and it went well with that
- 1/3 cup 2% Green yogurt
- 1/2 tsp kosher salt
- 1 tablespoon minced fresh dill weed (could handle some mint too, I'm sure)
- freshly ground pepper to taste
- 1 cup thinly sliced unpeeled cucumbers (I used six small pickling cucumbers, sliced thinly on the mandolin)
- 1/4 red onion, thinly sliced and separated into rings
- 1 clove garlic, minced - I didn't add this the first time because the chicken was already garlicky but it could certainly handle it

- Salad:
- 6 ounces rotini or penne pasta
- 1/4 cup dried cranberries or cherries
- 4 stalks celery, thinly sliced
- 1 cup diced cooked chicken (about 1 small breast)
- 1/4 cup pecans
- 1/3 cup Stella Freshly Crumbled Gorgonzola Cheese
- Dressing:
- 1/2 cup fresh raspberries
- 2-1/2 tablespoons white wine vinegar
- 2 tablespoons honey
- 2 teaspoons granulated sugar
- 1/4 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 6 tablespoons extra virgin olive oil
- 1/2 teaspoon poppyseeds

- 1 red pepper, seeded and cut into chunks (if on hand)

- 1 1/2 cups chicken broth
- 2 tbsp. tomato paste
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh basil
- 1/4 cup chopped fresh dill, or 2 tsp. dried
- 1 tbsp. chopped fresh thyme, or 1/2 tsp. dried
- 3/4 cup 2% greek yogurt
- salt and freshly ground pepper to taste

- There is little broth left at the end, I served Dan's with a fork and mine with chopsticks.
- I'm sure Dan would like the tofu puffs and the bean sprouts too.
