FISH*****Tuscan Tuna-and-Bean Wraps

- 8 tablespoons hummus (1/2 small pkg. of hummus from Costco is perfect)
- 1 large can Calipo tuna in olive oil, drained
- 1 tbsp. fresh basil chiffonade or minced fresh dill
- 2 tbsp. pitted Kalamata or nicoise olives, finely chopped (4 olives)
- 1/2 celery rib, finely chopped
- 1 tbsp. finely chopped red or green onion
- 1 tbsp. best olive oil
- 1 tbsp. lemon juice
- sea salt and freshly ground black pepper
- 4 large whole wheat wraps or 8 small WW whole wheat wraps
- greens of choice, to serve

- 2 servings (or 4, according to my comments)
- 2 cups water
- 8 large shrimp (prawns), peeled and deveined
- 1 ounce cellophane noodles
- 1 cup boiling water
- 1/2 cup shredded carrot
- 1/4 cup peeled, seeded and julienne cucumber
- 1/2 cup thinly sliced Napa cabbage
- 1/2 cup bean sprouts
- 2 tablespoons each chopped fresh cilantro and mint
- 4 rice-paper rounds, 8 inches in diameter
- 4 large fresh basil leaves, halved lengthwise
- For the sauce
- 2 tablespoons hoisin sauce
- 1 green (spring) onion, including tender green
- top, thinly sliced
- 1 1/2 tablespoons fresh lime juice
- 1 1/2 teaspoons fish sauce
- 1 1/2 teaspoons unsalted natural peanut butter
- 1/4 teaspoon red pepper flakes
- Pinch of brown sugar

- 1 1/4 cups olive oil
- rind of 1 preserved lemon quarter, finely slivered or chopped

- For the meatballs - 8 SERVINGS:
- 3/4 pound ground chicken
- 1/2 pound chicken sausage, casings removed
- 2/3 cup fresh white bread crumbs

- 2 pounds chicken wings about 24 pieces
- 1 tablespoon olive oil
- 4 - 5 teaspoons spice blend
- 4 1/2 teaspoons chili powder (I used half Ancho and half de Arbol, but any combo should work)
- 1/4 teaspoon chipotle chili powder
- 1 tablespoon sweet smoked paprika
- 2 1/4 teaspoons ground cumin
- 3/8 teaspoon ground cayenne pepper
- 2 1/4 teaspoons garlic powder
- 2 1/4 teaspoons onion powder
- 2 1/4 teaspoons kosher salt
- 2 1/4 teaspoons ground black pepper (from the jar)
- 1 tablespoon Peri Peri Blend (PC Black Label)

THIGHS*****Orange Teriyaki Chicken - Slow Cooker

Very tasty and easy to make
- cup teriyaki sauce OR:
- 4 servings
- 1/2 lb. skinless, boneless chicken thighs (I used a pack of skinless, boneless from Tarinis - 4 pieces)
- TERIYAKI SAUCE:
- 1/4 cup Japanese soy sauce
- 2 tbsp. mirin or sherry
- 1 tablespoon brown sugar
- 1 cloves garlic, crushed
- 1 tablespoons minced fresh or grated raw ginger
- grated zest and juice of 1 orange
- pinch of red pepper flakes
- (I used 1/2 of this sauce and 1/4 cup of bottled sauce (from HomeSense) that I had on hand - either/or will work)
TEA-Spiced Chai

1.Place all ingredients in a saucepan and bring to a simmer
- 1 cup (250 ml) Silk soy, almond or coconut beverage, any flavour except chocolate
- 1 black tea bag or 1 - 2 teaspoons loose black tea
- 1 Tbsp (15-30 ml) honey or agave, to taste
- 1/2 tsp (2 ml) vanilla
- 1/8 tsp (1/2 ml) cardamom
- 1/8 tsp (1/2 ml) ground cinnamon
- 1/8 tsp (1/2 ml) ginger
- Pinch of ground cloves
- Pinch of black pepper
