Semolina Pudding with Blueberries

* Grease ramekins and sprinkle insides with semolina flour, tapping out excess and set on baking sheet
- FOR THE BLUEBERRIES:
- 2 servings
- unsalted butter, for greasing the ramekins
- semolina flour, for flouring the ramekins
- 2 tbsp. sugar
- 1 tsp. cornstarch
- 1 cup fresh or thawed frozen blueberries
- 1 tbsp. cream sherry
- 1/2 tsp. grated orange zest
- FOR THE PUDDING:
- 1 cup 1% milk
- pinch of salt
- 3 tbsp. semolina flour
- 1/4 cup sugar
- 1 tsp. cream sherry
- 1/4 tsp. vanilla extract
- 1/8 tsp. orange extract
- 1 large egg + 1 large egg yolk
- PANS REQUIRED:
- 2 - 1 cup ramekins or custard cups

Always a hit and easy to throw together, even on a weeknight
- 1 tablespoon EVOO
- 1 small jalapeno, halved, seeded and cut into rings
- 1" fresh ginger, peeled and cut into matchsticks
- 1 - 2 cloves garlic, slice or minced (optional)
- 1 - 2 fresh shallots, thinly sliced into rings
- 2 green onions, cut on the diagonal
- 1 package Tilda prepared rice - Cilantro Lime, Coconut and Sweet Chili all work well, as does plain white basmati
- 4 ounces deli chicken, in small dice
- 2 tablespoons Becel
- salt, pepper and lime wedges, to serve

- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 1 leek, thinly sliced
- 2 medium carrots, diced
- 1 medium parsnip, diced
- 2 stalks celery, sliced
- 2 cloves garlic, minced
- 4 tablespoons unsalted butter
- 8 ounces cremini mushrooms, quartered
- 3.5 oz/100 grams Shiitake mushrooms, sliced (1 pkg.)
- 2 tablespoons tomato paste
- 3 tablespoons flour
- 1/2 cup marsala
- 1 can consome, no water
- 2 or three sprigs fresh thyme, leaves stripped
- 1 1/2 - 2 cups leftover beef gravy
- 1 1/2 - 2 lbs. leftover prime rib, cut into 1/2" dice (I had 1.9 lbs.)
- 1/4 cup chopped fresh parsley
- salt pepper as needed
- TOPPING OF CHOICE - cornmeal topping, cheddar biscuit topping, gruyere biscuit topping, cobbler topping (from chicken and broccoli cobbler recipe), pastry, puff pastry, mashed potatoes

1. Adjust oven rack to middle position and heat oven to 375 degrees
- 1/8 ounce dried shiitake or porcini mushrooms
- 2 cups water
- 1 sprig fresh thyme
- 1 bay leaf
- 1 garlic clove, peeled, plus 2 cloves, minced
- Salt and pepper
- 1/8 teaspoon baking soda
- 1/2 cup wild rice
- 1 tablespoon unsalted butter
- 1 tablespoon EVOO
- 1/2 pound cremini mushrooms, trimmed and sliced 1/4 inch thick
- 1/2 onion, chopped fine
- 1 teaspoon tomato paste
- 1/3 cup dry sherry
- 2 cups low-sodium chicken broth
- 1/2 tablespoon soy sauce
- 3 - 5 ounces shredded leftover chicken or turkey
- 2 tablespoons cornstarch
- 1/4 cup heavy cream or creme fraiche
- 2 tablespoons minced fresh chives, optional
- 1/4 teaspoon finely grated lemon zest

- 3-4 shallots, peeled and halved
- 1 sprig thyme
- 1 sprig rosemary
- 1 1/2 tbsp extra virgin olive oil
- salt and freshly ground black pepper
- 1 tsp PC Splendido White Condiment With Balsamic Vinegar of Modena
- 1 tsp liquid honey
- 3 tbsp. walnut pieces (didn't use)

I liked this a lot. Dan didn't care too much for it but I think it might go over better in warm weather
- 2 cups shredded carrots
- 1 garlic clove, chopped
- 1/2 tsp cumin seeds
- sea salt to taste
- 1/2 tbsp. harissa
- 1 tbsp. water
- 8 black olives, pitted and halved
- 2 oz. light feta cheese, crumbled
- 2 tbsp. extra virgin olive oil
- 1 tbsp. red wine vinegar

25/12/17 - mini-muffin sized - excellent
- 4 large eggs (200g - whisk lightly then weigh)
- 150 g all-purpose flour by weight
- 14 tablespoons 1% or 2% milk
- 2 g fine sea salt by weight
- 100 ml beef drippings, lard, shortening, or vegetable oil (about 1/2 cup)[I used duck fat - a good teaspoon in each mini-muffin cup which was too much - 1/4 to a scant 1/2 teaspoon should do it for the mini-muffins)

- 1 package PC Udon noodles, cooked in boiling water for 3 minutes then drained
- 1 - 2 teaspoons homemade Chinese Chili Oil
- 1 teaspoon minced ginger
- 1 teaspoon soy sauce
- 1 teaspoon rice wine vinegar
- juice of one lemon or lime wedge
- protein of choice - 8 medium shrimp, 2 ounces leftover fish, chicken, pork or beef, hard-boiled egg or omelet strips, 1/4 package baked or fried tofu, ALL OPTIONAL
- 3/4 cup chicken broth
- 1 package of Miso soup mix, or a teaspoon of white miso, or a teaspoon of Umami #5
- 2 ounces of baby spinach or baby spinach/kale/chard blend or spinach arugula blend
- leftover or fresh green veggies - bok choy, broccoli, asparagus, ALL OPTIONAL
- 1 green onion, thinly sliced on the diagonal
- chopped fresh cilantro or mint or both, if you have it
- sprinkle of sesame seeds to serve

- 30 grams four cheese blend or grated cheese of choice
- 2 thin slices smoked cheese or melting cheese of choice
