WINGS - Crispy Oven-baked Chicken Wings

If you are organised enough, uncover the chicken wings and leave them in the fridge for a few hours to dry out
- 2 lb/ 1 kg chicken wings, cut into wingettes and drumettes
- 1 tbsp baking powder (not soda)
- 1/2 tsp salt
- Oil spray
GROUND*****Mom's Meatball Stroganoff

* *Combine* first 6 ingredients, *blend* well and shape into 1" balls
- 1 lb. ground beef, lean or extra lean
- 1/2 cup milk - 1 %
- 1/2 cup dry breadcrumbs
- 1 tbsp. chopped dried parsley
- sea salt and freshly ground black pepper
- 1 tbsp. EVOO
- 1 tbsp. butter or becel buttery taste
- 1/2 medium onion, finely chopped
- 4 ounces sliced mushrooms - cremini or white
- 1/2 tsp. smoked spanish paprika
- 2 tbsp. flour
- 1 can consome - no water
- 1/3 cup sour cream - 5%
- 1 tsp. worchestershire
VEG****Pasta With Broccoli and Goat Cheese

This is very good for both of us
- 2 servings
- 3 1/2 oz. Catelli Smart Spaghettini (farfalle also works and is slightly easier to serve and eat)
- 2 tbsp. Toasted pine nuts
- 2 tsp. olive oil
- 2 large cloves garlic, thinly sliced
- 2 cups small broccoli or broccolette florets (130 grams)
- Grated zest of 1 lemon
- pinch of hot pepper flakes
- malden salt to taste
- 2 oz. goat cheese and/or ricotta or combination
- 3/4 oz. parmigiano reggiano
- (17/11/16 - I had leftover roast chicken on hand so I shredded the meat and skin from one thigh, sauteed it in a small non-stick pan over medium heat for about 10 minutes until crispy in parts, then tossed that in at the end - VVG)
TURKEY BREAST*****Roast Turkey Breast with Gravy

12/10/14 - Made this for Thanksgiving dinner for Dan and I
- 3-pound half-breast of turkey, skin-on, on the bone, rinsed and patted dry
- Kosher salt and freshly ground black pepper
- 1 stalk celery, cut into 2 inch pieces
- 1 small carrot, peeled and cut into 2-inch pieces
- 1 small onion, peeled and quartered
- 3 to 4 cloves of garlic, smashed and peeled
- sprigs of fresh herbs of choice - sage, rosemary, thyme, parsley
- 1/4 cup or more of turkey or chicken broth, for cooking
- 2 or so tablespoons unbleached all-purpose flour
- 3 cups turkey or chicken broth (I made my own with some turkey thighs and wings that I roasted in the oven with some carrot, celery, onion, garlic, herbs for an hour then scraped all into the slow cooker and cooked on low overnight)
KIT****Eat Smart Yogurt Curry Salad (Costco)

17/05/15-This was good for both, however, the dressing needs a bit of tweaking as it's kind of bitter so do that in...
- Cauliflower, kale, carrots, cabbage, roasted chickpeas, golden raisins, chia seeds, toasted almonds, yogurt curry dressing.
- Add 4 ounces PC Fire-Grilled Turkey Strips for a meat option.
- Put the dressing in a jar or cup and add a couple of teaspoons of honey and a tablespoon or so of yogurt and mix well. Taste and add up to a tablespoon of olive oil if it needs it.
POTATOES****Claire Robinson's Twice Baked Rosemary Blue Potato Mash

This was very good - although these quantities made a HUGE amount for us - 8 servings
- 2 tablespoons unsalted butter
- 2 tablespoons extra virgin olive oil
- 1 cloves garlic, peeled and smashed
- 1/2 tablespoon finely chopped rosemary leaves
- Freshly cracked black pepper
- 2 extra-large Yukon gold potatoes, peeled and cut into chunks
- Kosher salt
- 6 tablespoons crumbled blue cheese (90 grams)
- 30 grams crumbled blue cheese for topping
- 2 tablespoons panko for topping

- # 2 pounds beef filet at room temperature
- # 1 cup olive oil
- # 1 Grated zest of 1 lemon
- # 2 Juice of 2 lemons

SALSA****Avocado-Mango Salsa

This was very good for both
- 1 cup diced ripe mango
- 1 cup diced ripe California avocado
- 2 tablespoons minced red onion
- 2 tablespoons fresh lime juice
- 2 tablespoons freshly chopped cilantro leaves
- 1 tablespoon finely chopped and seeded jalapeno pepper
- 1/4 teaspoon ground cumin
- Salt and freshly ground black pepper
BEEF - Bacon & Brisket Burgers

These are super. If you're going to make burgers, these are the ones (provided you can get the ground brisket)
- 1 1/2 lbs. ground beef brisket (from Tarini's)
- 6 slices thick cut Tarini's bacon (regular or garlic pepper or combination)
- 2 teaspoons EVOO
- salt and pepper to taste
- brioche buns, to serve
- mustard, mayo, arugula, old cheddar cheese, etc. for serving
