CHOPS****Milk-Braised Pork Chops

- 1 tablespoon extra-virgin olive oil or duck or goose fat
- 2 boneless butterfly pork loin chops from Tarini's, halved
- salt and freshly ground pepper
- 1/2 large onion, chopped
- 1 small carrot, chopped
- 1 celery rib, chopped
- 2 garlic cloves, smashed
- 1 teaspoon anchovy paste
- 1/4 cup white wine
- 1 cup chicken stock or low-sodium broth
- 2 thyme sprigs
- 1 rosemary sprig
- 1 sage sprig
- 1 bay leaf
- 1 1/4 cups milk
- 1 tablespoon all-purpose flour
- 1 tablespoon soft butter
SAUSAGE****Laura Calder's Sausage and Lentils

*Put* the lentils in a saucepan with the stock, onion, bay leaf and thyme
- 2 servings
- 3 ounces du Puy lentils
- 1 1/4 cups chicken stock
- 1/2 onion, peeled - leave both ends on, otherwise it falls apart and you have to pick out each piece
- few sprigs of thyme, tied with a piece of string so you can fish out the stalks
- 1 bay leaf
- 1 fresh, fat sausage from the butcher (I used a PC Honey Garlic)
- 1 tablespoon butter
- 1 - 2 shallots, minced
- 1 - 2 tbsp. walnut or hazlenut oil (this contributes much to the flavour, don't be tempted to substitute plain olive oil)
- salt and pepper
SHRIMP-Baked Shrimp with Tomatoes and Feta

Preheat the oven to 425 degrees F
- 1 tablespoon olive or coconut oil
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- pinch of hot pepper flakes
- splash of white wine, to deglaze pan
- 1 cup fire-roasted tomatoes, with their juices
- 2 tbsp. finely minced fresh flat-leaf parsley (if you've got it)
- 1 tablespoon finely minced fresh dill
- 8 oz. medium shrimp, peeled and deveined
- salt
- freshly ground black pepper
- 1 ounce crumbled feta cheese
- Chopped fresh dill
- lemon wedges to serve
GNOCCHI****Gnocchi with Gorgonzola Sauce

I love this and Dan will eat it occasionally, although not with gnocchi
- 1 serving
- 2 oz. gnocchi or butternut squash gnocchi
- 4 tbsp. fat-free milk
- 1 tsp. all-purpose flour
- 1/2 - 3/4 ounce blue cheese of choice
- 1 tsp. hazelnut oil
- 1 tbsp. chopped hazelnuts
- 1 tbsp. chopped salted pumpkin seeds
- 1 tbsp. fresh sage leaves

- 1/4 teaspoon coriander seeds
- 1/4 teaspoon cumin seeds
- 1/4 teaspoon mustard seeds
- 1 tablespoon olive oil
- 1/2 small onion, finely chopped
- 1 - 2 cloves garlic, finely chopped
- 1/2 cup black beluga lentils, rinsed
- 1 1/2 cup chicken broth
- 1/2 teaspoon red wine vinegar
- Kosher salt, freshly ground balck pepper
- 1/4 cup plain Greek yogurt
- 2 tbsp. fresh mint leaves, thinly sliced or torn
POLENTA****Slow Cooker Basic Polenta

Dan liked this very much. With the coarser grained polenta, it's more like grits than polenta - sticks like an SOB
- OPTIONAL:
- 2 servings
- 1 1/4 cups chicken broth
- 1/4 cup coarse-grain cornmeal
- pinch sea salt
- fresh chopped herbs of choice
- Saffron Polenta - Add a pinch of saffron to the broth.
- Blue Cheese - Add 1 ounce crumbled blue cheese, 1 tsp of truffle oil and 2 tbsp fresh basil chiffonade or minced fresh thyme or sage at end
EGG****Avocado Egg Salad Wrap

Combine egg salad ingredients and refrigerate
- 2 hard boiled eggs, diced very small
- 2 tbsp greek yogurt
- 1 tsp. Sriracha Mayo (this amount is barely noticeable - might want to try some kind of hot sauce or chili sauce directly)
- 1/2 avocado, diced very small
- 1 scallion, minced
- chopped fresh dill, cilantro, basil or other herbs, as available
- salt & pepper to taste
- 1/4 tsp Cajun seasoning or Aleppo pepper (Optional)
- 1 1/2 cups Spring Mix
- 6 WW Whole Wheat Tortillas
QUICK BREAD - Lemon Poppy Seed Bread - Bread Machine - 5 Points

- 8 - 10 cherry tomatoes, halved or quartered
- pinch of red pepper flakes
- pinch of malden salt
- 1 tbsp. tomato paste
- 2 tbsp. chicken broth
- 1 tbsp. vodka
- 1 oz. light cream cheese - I tried the sun-dried tomato and basil one the last time, it was pretty good
- 1 -2 tbsp. slivered fresh basil
