  • 1 tablespoon light mayonnaise
  • 1/2 - 1 teaspoon toasted sesame oil (taste to decide)
  • 1/2 tablespoon lemon or lime juice
  • 1 teaspoon chili-garlic paste or sweet chili sauce (if Dan's eating it too)
  • 1 teaspoon toasted black and white sesame seeds
  • pinch red pepper flakes (my portion only)
  • 1 small can tuna, drained
  • 1 or 2 green onions, thinly sliced
  • Kosher salt

  • 5 slices (150 grams) bacon (Tarini's), cut into lardons
  • 1/2 tablespoon canola or peanut oil
  • 4 to 5 scallions, whites only, finely sliced on the diagonal
  • 1 - 2 shallots, thinly sliced
  • 1 - 2 cloves garlic, finely minced
  • 1 " fresh ginger, cut into small matchsticks
  • 1 packed cup kimchi, with juice, (12 ounces) drained and chopped, juice retained
  • 1/2 pound small cooked shrimp, thawed, or chicken or pork (cut into bite-sized pieces)
  • 1 to 2 tablespoons gochujang, to taste - didn't need with my current batch of kimchi
  • 1 cup Jasmine rice (to equal 3 to 4 cups cooked rice)
  • 1/2 tablespoon sesame oil
  • 2 teaspoons soy sauce
  • 3/4 cup frozen peas, thawed
  • 1 pinch salt, to taste
  • 5 teaspoons toasted sesame seeds, to garnish
  • 1/2 stalk green onion, thinly sliced, to garnish
  • roasted seasoned seaweed, shredded, to garnish, optional
  • 1 fried egg per person, to serve on top

  • 2 teaspoons coriander seeds (toasted and ground)
  • 2 teaspoons cumin seeds (toasted and ground)
  • 1/4 teaspoon turmeric (ground)
  • 2 stalks lemongrass (peeled & chopped)
  • 1 shallot (diced)
  • 1 tablespoon garlic (grated)
  • 1 tablespoon galangal (or ginger, grated)
  • 1 birds eye chili (sliced)
  • 1 lime (juice and zest)
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon oil
  • 1 pound chicken (cut into thin strips)
  • wooden skewers (soaked in cold water for 30 minutes)
  • 1 teaspoon coconut oil
  • 1 teaspoon Thai red curry paste
  • 1 1/2 tablespoons peanut butter
  • 3 tablespoons coconut milk
  • 1 tablespoon fish sauce (add by teaspoon to taste)
  • 2 teaspoons lime juice
  • 2 teaspoons palm sugar (or brown sugar)
  • 1 teaspoon chili sauce such as sriracha (or to taste)
  • finely minced fresh cilantro, basil and mint
  • 2 tablespoons peanuts roasted and chopped

  • 1 puff pastry sheet, thawed according to package instructions and unfolded
  • 4 oz. Gruyère cheese, cut into appropriate-sized pieces, each 1/4 inch thick
  • 6 bratwurst links, cooked according to Beer-Braised Bratwursts with Onion recipe, each quartered lengthwise, then cut crosswise into thirds (or other sizes of choice)
  • 1 egg, lightly beaten with 1 tsp. water
  • Cornichons and assorted mustards for serving
