- Chicken (2 servings):
- 2 tablespoons lime juice, (about 1 lime) + grated zest (Optional)
- 1 tablespoons extra virgin olive
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1 jalapeno, sliced OR a couple of splashes of Tabasco sauce (much easier)
- 8 ounces chicken breasts cut into 1-inch cubes
- Avocado Cream Dip (8 servings):
- 1 medium-sized ripe avocado
- 1/2 cup 2% Greek yogurt
- 1 tablespoon chopped cilantro (Optional)
- 2 tablespoons lime juice (about 1 lime)
- 1 teaspoon Tabasco brand Original Red Sauce
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- Skewers:
- 12 1-inch square pieces white onion (about 1/2 onion)
- 12 1-inch square pieces green bell pepper (about 1/2 pepper)
- 12 1-inch square pieces red bell pepper (about 1/2 pepper)

The Mediterranean fish soup bourride is something like a bouillabaisse but has a consistency more like stew
- 3 SERVINGS
- 1 large leek (white parts only), cut crosswise into 1/4-inch-thick slices
- 5 1/2 oz. halibut, cut in 1" chunks
- 3 1/4 oz. shrimp, shelled (about six)
- 5 3/4 oz. scallops, cut in four if large
- 2 tbsp. EVOO
- 1 1/2 servings Slow-braised tomatoes (four halves, cut in four)
- 1/4 cup diced fennel
- 1 shallot, sliced
- 2 cloves garlic, thinly sliced
- 10 littleneck clams, with shells, 1 lb.
- 1/3 cup white wine
- 1/3 cup clam or chicken broth
- pinch dried hot red pepper flakes (easy - there are already some in the tomatoes)
- 1 tsp. finely grated fresh lemon zest
- 4 fresh basil leaves, chiffonade
- 1 tbsp. chopped fresh parsley

- 6 whole tomatoes
- 1/2 tsp. sea salt
- 2 cloves garlic, chopped
- 2 anchovy filets, rinsed
- 6 tbsp. fresh parsley, chopped (or substitute fresh basil for all or part)
- 8 tbsp. panko
- fresh thyme
- 1 tbsp. olive oil
- 2 tbsp. grated parmesan cheese
- 1 tbsp. grated gruyere or 4-cheese blend per tomato half

- TO FINISH:
- 1 tablespoon olive oil
- 2 medium carrots, diced
- 1 medium onion, diced
- 2 celery ribs, diced
- 2 garlic cloves, minced
- 2 teaspoons ancho chile powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- 6 cups chicken stock
- 1/2 cup hominy grits, cooked for about 60-80 minutes on regular cycle in rice cooker, then drained, reserving liquid
- 2 - 4 tablespoons hominy cooking liquid
- 8 ounces poached chicken breast, shredded
- 1 can fire-roasted tomatoes
- 1 - 2 teaspoons chipotle in adobo sauce (to taste)
- 1 cup chopped fresh cilantro leaves
- 1 lime, halved
- TOPPINGS:
- 1 medium avocado, diced
- fried tortilla strips
- lime wedges
- 1/4 cup crumbled queso fresco or feta or tex-mex blend
- 1/4 cup chipotle-lime crema
MUFFINS****Cranberry-Orange Muffins - Cooking Light

These were very good for me
- 12 12 12 servings
- 3/4 3/4 3/4 cup all-purpose flour
- 3/4 3/4 3/4 cup stone ground whole wheat flour
- 3/4 3/4 to 1/2 3/4 12 to equal 1/2 cup oat flour or 3/4 cup 12 grain flour
- 2 2 2 tbsp. ground flax seed
- 3/4 3/4 3/4 cup sugar
- 1 1/2 1 1/2 2 1/4 baking powder (they didn't rise enough, try 2 teaspoons) n.b. I also added 1/4 cup of milk that isn't called for so that may have affected the rise as well
- 1 1 1 teaspoon salt
- 1/2 1/2 1/2 teaspoon baking soda
- 2 2 2 teaspoons grated orange rind
- 3/4 3/4 3/4 cup orange juice
- 1/4 1/4 1/4 cup walnut, hazlenut or almond oil
- 1 1 1 large egg, lightly beaten
- 1/3 1/3 1/3 cup (38 grams) chopped pecans, toasted
- Cooking spray
- 2 2 2 tbsp. turbinado sugar
Mario Batali Linguine With Walnut Sauce - 12 Points
