AVOCADO*****Simple Guacamole

30/05/15-Exc for both. We had it with black bean Beanitos as a lunch
- FOR EACH AVOCADO USED:
- 1 ripe avocado, peeled, pitted and diced
- 2 tablespoons chopped fresh cilantro stems and leaves
- 1/2 jalapeno or serrano chile, seeded, deveined and finely chopped (Leave out if freezing)
- 1/2 lime, juiced
- 1 teaspoon best EVOO
- 1/4 white onion, finely chopped (Leave out if freezing)
- 1 clove garlic, minced (Optional)
- chipotle tabasco, to taste
- pinch each cumin and cayenne or chili powder
- Kosher salt to taste

- 2 scallions, thinly sliced
- 1/4 cup plain yogurt
- 1 1/2 tablespoons mayonnaise
- Juice and zest of 1/2 lemon

- 1/4 cup low sodium chicken stock
- 1 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 2 tablespoons hoisin sauce
- 1 teaspoon Chinese chili paste
- 2 teaspoons sesame oil
- 3 tablespoons sugar
- 2 teaspoons cornstarch

- 14 jalapeño peppers, halved lengthwise and seeded

- 3 tablespoons sweet pickle relish
- 3 tablespoons very finely minced red bell pepper

P***Michael Smith's Parmesan Proscuitto Puff Pastry Pinwheels

These were very disappointing the first time
- VARIATION:
- 1 package frozen puff pastry, 2 sheets, thawed
- A few spoonfuls of Dijon mustard
- 10 or 12 slices of proscuitto
- 1/2 cup Grana Padano parmesan cheese, grated
- Add chopped fresh thyme and oregano to Dijon before brushing pastry. Use thinly sliced hot or mild Capicolla in place of prosciutto and Asiago in place of parmesan (Michael Bonacini)
