LENTIL - Moroccan Red Lentil Soup (HF/HP)

Heat olive oil in a dutch oven or large pot over medium-high heat
- 3 Tbsp. extra virgin olive oil
- 1 large onion, chopped
- 1 celery stalk, chopped
- 1 carrot, chopped
- 3 garlic cloves, chopped
- 2 tsp. ground coriander
- 1 tsp. ground cumin
- 1 tsp. ground turmeric or 2 tsp. freshly grated
- 1/2 tsp. sweet paprika
- 1/4 tsp. ground cinnamon
- 1 pinch saffron
- 1/2 tsp. sea salt
- Dash of pepper
- 8 cups vegetable or chicken broth, low sodium if possible
- 1-28 oz can San Marzano tomatoes (or fire-roasted tomatoes)
- 2 cups red lentils, picked over, washed and rinsed until water runs clean
- 1 lemon, juiced
- Pinch of red pepper flakes
- 4 Tbsp. fresh flat-leaf parsley, chopped
- 1 Tbsp. fresh cilantro, chopped

- Optional :
- Makes 1 individual pizza - 4 slices
- 2 teaspoons extra-virgin olive oil, garlic oil or chili oil
- 3 - 4 fresh bocconcini, thinly sliced
- 1 Roma tomato, cut crosswise into 1/8 - 1/4-inch-thick slices or equal amount of thinly sliced cherry tomatoes (slice thinly and lay between paper towels for an hour or two before assembling pizza)
- 2 tbsp. freshly grated Parmesan
- 6 fresh basil leaves
- Maldon salt
- dollops of basil pesto between the tomatoes
- thin strips of prosciutto
- handful of arugula over all
- pinch of crushed red pepper flakes

- 1/2 cup white or brown mushrooms, sliced 1/8" thick
- 1 1/2 tablespoons red wine vinaigrette (or 1 tbsp. EVOO and 1 tsp. red wine vinegar)
- 2 cups chicory, arugula, baby spinach or baby blend
- 2 tablespoons thinly sliced green onions
- handful of halved cherry tomatoes or oven-dried cherry tomatoes
- Smoked sea salt and freshly ground black pepper
- 2 slices of bacon, sliced 1/4 inch thick and cut crosswise into strips about 1/4" wide
- 1 poached egg
COFFEE-Salted Caramel Mocha

1. Combine Silk, espresso (or coffee), salt and 1 Tbsp (15 ml) caramel syrup in a saucepan and heat just until warm
- 1/2 cup (120 ml) Silk Chocolate soy beverage or Dark Chocolate almond beverage
- 1-2 shots espresso (or 2-4 Tbsp [30-60 ml] strong black coffee)
- Pinch of salt
- 2 Tbsp (30 ml) caramel flavoured syrup,* divided
- Regular or non-dairy whipped cream
- 1/8 tsp (1/2 ml) sea salt for garnish
VINAIGRETTE-Poppy Seed Dressing for Fruit Salad

- 1/4 cup hazlenut, walnut or almond oil
- 2 tbsp. fresh lemon juice, plus grated zest
- 1 tbsp. white wine or champagne vinegar
- 2 tbsp. sugar
- 1 teaspoon poppy seeds
- 1/4 teaspoon Dijon mustard
- pinch of sea salt
- Fresh mint leaves, for garnish, optional

- For Sauce:
- 1 block firm tofu, pressed and diced 1/2" thick
- 3 Tablespoons cornstarch
- pinch of salt
- 1 tbsp. EVOO
- 2 green onions, minced
- 1 tsp. siracha
- 3/4 teaspoon soy sauce
- 1 1/2 tablespoons sugar
- 3/4 teaspoon sesame oil
- 1 teaspoon chili flakes
- 2 tablespoons chicken broth
- 1 tbsp. finely minced fresh mint (didn't have)
- Lime Juice or Lemon Juice - 1 tablespoon (adjust to your taste)I used 2 key limes, add the zest next time too

- 8 servings
- 2 layers fast fry steak from Tarini's (usually 8 pieces)
- sea salt and freshly ground pepper to taste
- 2 tbsp. german-style mustard
- 4 slices bacon from Tarini's, halved
- 1 medium onion, cut into 8 wedges
- 1/4 cup chopped fresh parsley, optional
- 2 dill pickles, quartered lengthwise
- 2 tbsp. EVOO
- 2 cans consome, no water (this is double the amount called for to ensure adequate gravy)
- 2 soup cans red wine
- 2-3 tbsp. flour
SALMON****Salmon and Wheat Berry Salad

- 1/2 cup vertically sliced red onion
