VINAIGRETTE****Mint Vinaigrette - Mediterranean Fresh

* Combine lemon juice and chopped mint in a saucepan and bring to a boil
- 30 servings (per tablespoon)
- 1/4 cup fresh lemon juice
- 1/4 cup loosely packed chopped mint, including stems
- 1/4 cup red wine vinegar
- 2 tablespoons fresh lemon juice
- 1/2 cup very finely chopped fresh mint
- 1 teaspoon honey
- 1/2 teaspoon sea salt
- 1 1/4 cups mild and fruity extra virgin olive oil
SALAD - Simple Mixed Greens

Combine ingredients and toss with dressing of choice
- 2 cups (85 grams) mixed baby lettuce
- 1/4 cup olive oil croutons
- 6 cherry tomatoes, halved
- 1/8 small red onion, thinly sliced
- dressing of choice - not in calorie count
- shave parmigiano reggiano - not in calorie count
MUSHROOM****Creamy Hungarian Mushroom Soup

- TO SERVE, for each 2-bowl serving:
- 2 tablespoons extra-virgin olive oil
- 1 pound portabello mushrooms, diced 1"
- 1 medium onion, diced
- 3 tablespoons all-purpose flour
- 2 tablespoons paprika, preferably Hungarian (this worked but I'd like to try Spanish the next time)
- 4 cups reduced-sodium beef broth
- 2 cups 2% milk
- Few sprigs of thyme tied up with a bay leaf
- 1 1/2 pounds russet potatoes, cut into 1/2-inch pieces
- 1/2 cup 2% Greek yogurt
- 4 tablespoons fresh dill
- salt & pepper to taste
- 2 shakes Worchestershire sauce
- 2 tablespoons whipping cream
- 60 grams Kraft 4-Cheese Italiano Light blend
SHRIMP****Shrimp and Roasted Corn Chowder

- 4 servings
- 4-5 ears corn, kernels cut from the cobs with the cobs reserved
- 1/2 pound shrimp peeled and deviend with the shells reserved, chopped into bite-sized pieces
- 1 bottle clam juice
- 4 cups chicken broth, plus additional, as needed (see below)
- 4 slices smoked bacon, cut into one inch pieces
- 1 onion, diced
- 2 stalks celery, diced
- 2 leeks, thinly sliced
- 1/2 cup minced fennel
- 1/2 red pepper, diced
- 2 cloves garlic, chopped
- 10 small sprigs of thyme, tied with a piece of string
- 2 teaspoons smoked paprika
- 1 pinch cayenne
- 2 tbsp. flour
- 1 large Yukon Gold potato, (about 10 oz.) cut into bite sized pieces
- 1/2 cup whipping cream
- salt and pepper to taste
CHEESE****Blue Cheese Spread

- 4 ounces light cream cheese, softened
- 2 ounces crumbled bleu cheese (I used PC Black Label Gorgonzola Piccante - you might need more if using a milder bleu)
- 1 clove minced garlic
- 1 small shallot, very finely minced
- grated zest of one half a lemon
- 1 - 2 teaspoon fresh thyme or lemon thyme
- salt and pepper to taste
CUBE STEAK - Steak Fingers with Gravy

- 10 - 12 oz. Cube Steak, cut into 1-inch strips
- 1/3 cup flour
- salt and freshly ground black pepper
- 1 pinch cayenne
- 1 egg
- 1/3 cup milk
- Olive oil for frying
- 2/3 cup milk
- salt and freshly ground black pepper, to taste
BISQUE****Roasted Red Pepper And Tomato Bisque

- 4 servings
- 3 red peppers
- 1 can fire-roasted tomatoes, undrained
- 1 tbsp. EVOO
- 3 cups chicken stock
- 1/2 large onion, in chunks
- 6 cloves garlic, whole
- 1 tbsp. fresh basil
- 2 tsp. fresh thyme
- 1 tbsp. fresh oregano or 1 tsp. dried
- 2 tsp. sugar
- 1/4 cup light cream cheese (62 grams)

BEEF-Korean Beef Rice Bowl

1. Cook the rice according to package instructions
- 2 cups raw rice
- 1 pound beef (see headnote)
- 2 tablespoons soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 garlic clove, finely minced
- 1 tablespoon brown sugar
- 1 1/2 tablespoons cooking oil
- 1/2 onion, diced
- 1 large carrot, cut into matchsticks (or 1 cup matchstick cut carrots)
- 1 small zucchini, diced
- 2 handfuls of spinach leaves
- 1 tablespoon roasted sesame seeds

- 4 tablespoons of vinegar (I used champagne, recipe called for white balsamic vinegar)
- 1 cup of fresh parsley
- 1 pitted and peeled avocado
- 1/4 cup of extra virgin olive oil
- 6 tablespoons of water (or more as needed for consistency)
- 1 clove of garlic
- juice and zest of 1 lemon or lime
- 2 tablespoons chives, green onions or shallots
- Salt and pepper to taste
