Gwyneth Paltrow's Gemolata Bread Crumbs

These bread crumbs are great with Paltrow's Duck Ragu
- 2/3 cup fresh bread crumbs, toasted and coarsely ground.
- zest of two lemons
- 1 1/2 tablespoons of finely chopped fresh parsley
- small pinch of coarse salt
Butternut Squash Casserole

Preheat oven to 350 degrees
- 1 small butternut squash, peeled, halved, seeded and thinly sliced
- 1 small red onion, thinly sliced
- 1/3 cup unsweetened apple cider or juice
- 2 T grapeseed oil
- 2 T grade B maple syrup
- 1/4 cup toasted slivered almonds

- 1 box German chocolate cake mix
- 1 cup milk
- 14 oz. caramel candy
- 1 cup chocolate chips
- 1 cup nuts
Chocolate Chip Pancakes with Cinnamon Cream

Preheat griddle to 350 degrees F
- Cinnamon Cream:
- 1 1/4 cups all-purpose flour
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 2 large eggs, separated
- 3 tablespoons butter, melted plus 4 tablespoons, divided
- 1/2 cup miniature semi-sweet chocolate morsels
- Cinnamon Cream, recipe follows
- Maple syrup, for serving
- 1 cup heavy whipping cream
- 1/4 cup confectioners' sugar
- 1/4 teaspoon ground cinnamon
Refreshing Celery Smoothie

Place all ingredients in a blender and blend on a high setting
- 1 apple, cored and sliced
- 1-2 stalks celery
- 4-8 strawberries (fresh or frozen)
- juice from 1/2 organic lemon
- 4 oz. water
- 4-6 ice cubes (if not using frozen strawberries)
- stevia to taste

- 1 5-ounce package Ocean Spray® Craisins® Original Dried Cranberries
- 2/3 cup white or semi-sweet chocolate chunks or chips
Lemon Lime Sports Drink

Roasted Red Pepper and Tomato Soup with Garlic and Parmesan Croutons

As a busy mom, I usually buy boxed roasted red pepper and tomato soup as a timesaver
- 2 T canola oil
- 1 carrot, peeled and chopped
- 1 shallot, chopped
- 1 1/2 cups chopped onion (about 1 large onion)
- 2 tsp garlic powder
- Two 14 1/2 oz cans diced roasted tomatoes with their juice
- One 17 oz jar roasted red peppers, drained and coarsely chopped
- 2 cups roasted vegetable stock
- 3/4 cup heavy cream
- 1/2 tsp salt
- 1/2 tsp pepper
- garlic and parmesan croutons for garnish (see recipe)
