Chocolate Chip Pumpkin Bread

Preheat oven to 350ºF. Butter and flour two 9-inch x 5-inch x 3-inch bread load pans
- 3 1/4 cups flour
- 2 1/2 teaspoons cinnamon
- 1/2 teaspoon ground ginger
- 2 teaspoons baking soda
- 2 teaspoons salt
- 1 can pumpkin puree (15 ounces)
- 1 cup vegetable oil
- 3 cups sugar
- 4 eggs
- 1 teaspoon vanilla
- 2/3 cup water, at room temperature
- 1 1/2 cups chocolate chips
Ashley's Famous Tomato Soup

Warm almond or rice milk in a saucepan over low heat
- 2 (6 oz) cans organic tomato paste
- 15-20 grape tomatoes, diced
- 3-4 leaves hearts of romaine, finely chopped
- 1 1/2 T cilantro
- 1 T garlic salt
- 1 tsp. cayenne pepper
- 2 tsp. cumin
- 1 tsp. black pepper
- 3-4 cups almond or rice milk

- 25 Nabisco Ginger Snaps, finely crushed (about 1 1/2 cups)

Chocolate Caramel Cookies with Sea Salt

Preheat oven to 350ºF; line 2 baking sheets with baking paper, lightly coated with cooking spray
- 1 1/4 cup all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 5 tablespoons butter
- 7 tablespoons unsweetened cocoa (I used dark cocoa)
- 2/3 cup granulated sugar
- 1/3 cup packed brown sugar
- 1/3 cup plain yogurt
- 1 teaspoon vanilla extract
- Soft caramel, rolled into little balls (I used Peter's caramel)

Magnolia Table's Beef Stew

1. Lightly season the beef with a pinch each of salt and pepper
- 1 lb beef stew meat, cut into 1 1/2 inch chunks
- Kosher salt and freshly ground black pepper
- 4 T (1/2 stick) salted butter
- 1 white onion, cut into 1/4 inch dice
- 4 carrots, peeled and cut into 1/4 inch dice
- 3 celery stalks, cut into 1/4 inch dice
- 1/4 cup all-purpose flour

- 1 32 oz box beef broth
- 1 14.5 oz can fire-roasted diced tomatoes
- 1 14.4 oz can gold and white corn, undrained

The Awesome-est Blueberry Muffins

Blueberry Muffins: Preheat oven to 385 degrees
- For Blueberry Muffins:
- 3 cups minus 2 T flour
- 1 tsp. baking soda
- 2 tsp. bakins powder
- heavy pinch of salt
- dash of nutmeg
- 1 cup sugar
- 1/2 cup vegetable oil
- 1 egg
- 1 generous cup of plain, unflavored yogurt (throw in extra if you want)
- 2 cups fresh blueberries
- vanilla extract
- softened butter (for muffin tins)
- turbinado sugar or brown sugar(optional)
- For Yogurt-Blueberry Sauce:
- 1 cup frozen or fresh blueberries
- 1 tsp. sugar
- 1/4 cup plain yogurt
Classic Tomato Spaghetti (Jamie Oliver)

To prepare your pasta: Peel and finely slice the garlic
- 2 cloves of garlic
- 1 fresh red or green chile
- a small bunch of fresh basil
- sea salt and freshly ground black pepper
- 1 lb. dried spaghetti
- olive oil
- 1 14 oz. can of diced tomatoes
- 4 oz. Parmesan cheese
Jalapeno Popper Wonton Cups

- 12 wonton wrappers (*I found them in the produce section of my local grocery store)
- 4 oz. cream cheese softened
- 1/2 c. sour cream
- 12 oz. bacon cooked & crumbled (reserve 2 Tbsp.)
- 1 c. shredded cheddar cheese (reserve 2 Tbsp.)
- 3-4 jalapeños seeded and chopped (**for more spice, do not remove all the seeds)
