Homemade Cinnamon Raisin Bagels

1. Day one: To make the sponge, stir the yeast into the flour in a 4-quart mixing bowl
- Sponge:
- 1 teaspoon instant yeast
- 4 cups unbleached high-gluten or bread flour
- 2 1/2 cups water, room temperature
- Dough:
- 1 teaspoon instant yeast
- 3 3/4 cups unbleached high-gluten or bread flour
- 1 tablespoon ground cinnamon
- 5 tablespoons sugar
- 2 3/4 teaspoons salt
- 2 teaspoons malt powder or 1 tablespoon dark or light malt syrup, honey, or brown sugar
- 2 cups loosely packed raisins, rinsed with warm water to remove surfact sugar, acid, and natural wild yeast
- To Finish:
- 1 tablespoon baking soda
- Cornmeal or semolina flour for dusting
- Melted butter for brushing (optional)
- Cinnamon sugar for sprinkling (optional)
Salsa Pina

Mix all ingredients together in a large bowl
- 1 1/2 cup fresh pineapple, chopped
- 1 cup cherry tomatoes, quartered
- 1/4 cup Vidalia onion, chopped
- 1/4 cup red onion, chopped
- 1/4 cup red bell pepper, chopped
- 1 fresh chili peppers, seeded
- 2-3 T fresh lime juice
- 1/4 tsp. sea salt
- 1 T olive oil
- 1/4 cup fresh cilantro, chopped
Cheese-Garlic Biscuits

1. Heat oven to 450 degrees
- 1 cup Bisquick Heart Smart mix
- 1/3 cup fat-free (skim) milk
- 1/4 cup shredded reduced-fat Cheddar cheese (1 oz)
- 1/4 tsp. garlic powder
- butter-flavored cooking spray, if desired
Chocolate Chip Cookies (Katie Jacobs)

Preheat oven to 350 degrees
- 1/2 cup of butter (1 stick)
- 1/2 cup of butter (1 stick)
- 1/2 cup of sugar
- 1/2 cup of brown sugar
- 1 tsp. pure vanilla extract
- 1 egg
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 1/2 cups of all purpose flour
- 1/2 cup chocolate chips
- 1/2 cup toffee bits
Key West Cupcakes

To make filling: In large bowl, beat pudding mix and whipping cream with wire whisk 2 minutes
- Filling
- 1 box (4-serving size) vanilla instant pudding and pie filling mix
- 1 1/2 cups whipping cream
- 1/4 cup fresh Key lime or regular lime juice
- 4 drops green food color
- 1 1/2 cups powdered sugar
- Cupcakes
- 1 box Betty Crocker® SuperMoist® yellow cake mix
- Water, vegetable oil and eggs called for on cake mix box
- Frosting
- 1 container Betty Crocker® Whipped fluffy white frosting
- 1 tablespoon fresh Key lime or regular lime juice
- 1/2 teaspoon grated Key lime or regular lime peel
Oatmeal Raisin Cupcakes with Maple Glaze

Cupcakes: Cream butter and sugar
- 1/2 C butter (1 stick)
- 1 1/2 C sugar
- 3 eggs
- 1 t vanilla extract
- 8 oz applesauce
- 1/2 C honey vinegar (I love the flavor of honey vinegar, but I do realize that it's not a common pantry item. If you don't have any, you could substitute apple cider vinegar.)
- 1 1/2 C oats
- 1 C flour
- 1 t baking powder
- 1 t baking soda
- 1 t cinnamon
- 1 t allspice
- 1/2 t salt
- 2 C raisins (I used half golden raisins and half dark raisins)
- Maple Glaze Recipe
- 2 3/4 C powdered sugar
- 2 T corn syrup
- 1/2 t maple extract
- 4-6 T water
Truffle Cupcakes

Mix apple cider vinegar and milk in a medium-sized bowl
- Cake Ingredients:
- 1 T apple cider vinegar
- 1 1/2 C milk (any kind will work - I used soy)
- 2 C flour
- 1 1/4 C sugar
- 1/2 t baking soda
- 1/2 t salt
- 1/4 C white truffle oil
- 1/4 C vegetable oil
- 1/4 C truffle honey
- Ganache Ingredients
- 5 oz dark chocolate
- 1/2 C heavy whipping cream
- 1/4 C truffle honey
- Optional Toppers
- 2 oz white chocolate
- Chocolate truffles (I used Vosges truffles)
Teriyaki Salmon

In a storage bag, combine first 6 ingredients and mix well
- 1/4 cup grapeseed oil
- 1/4 cup fresh lemon juice
- 1/4 cup Bragg's liquid aminos
- 1 tsp. stoneground mustard
- 1 tsp. ground ginger
- 1/4 tsp. garlic powder
- 4 wild caught salmon steaks
Brazilian Brigadeiro

In a medium saucepan add the sweetened condensed milk, butter and chocolate powder
- 1 can sweetened condensed milk
- 1 tablespoon unsalted butter
- 7 tablespoons chocolate powder
- sprinkles for decorations
Avocado Mango Salsa

- 1 mango, peeled, seeded & diced
- 1 avocado, peeled, pitted & diced
- 4 medium tomatoes, diced
- 1 jalapeno pepper, seeded & minced
- 1/2 cup fresh cilantro
- 3 cloves garlic, minced
- 1 tsp. sea salt
- 2 T fresh lime juice
- 1/4 cup chopped red onion
- 3 T olive oil
