Perfect for veggie trays to take to parties
- 1 cup mayonnaise alternative (like Veganaise with grapeseed oil)
- 2 T organic mustard
- 1/4 cup oil & vinegar dressing (see recipe)

- 3 cups almond flour
- 1 1/2 tsp. Celtic sea salt

Easy Chicken Enchiladas

- 1 8oz. pkg. softened cream cheese
- 1 small container sour cream
- 1 large jar of medium to hot salsa
- 4 chicken breasts
- 10-12 corn or flour tortillas

- 1/2 gallon vanilla ice cream – SOFTENED
- 1 20 oz can crushed pineapple
- 1 8 oz coconut cream
- 1 46 oz pineapple juice

Roasted Vegetable Stock

Roasting the vegetables before making the stock adds richness and a robust flavor
- 1/4 cup olive oil
- 2 large yellow onions with skins on
- 2 carrots
- 2 celery ribs with leaves
- 6 garlic cloves with skins on, smashed
- 2 medium potatoes, cut into 1-inch cubes
- 2 leeks, washed and cut into 1-inch strips (white parts only)
- 2 fennel bulbs, fronds reserved, cut into 6 pieces each
- 4 bay leaves
- 6 sprigs fresh thyme
- 15 sprigs fresh flat-leaf parsley
- 12 whole peppercorns

- Cupcake Ingredients:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 cup cocoa powder
- 1 1/2 cups sugar
- 3/4 cup smooth peanut butter
- 2 large eggs
- 1/2 cup peanut oil
- 3/4 cup milk (I used 2%, but if you have another kind on hand, go ahead and use it)
- 1/2 teaspoon vanilla extract
- 1 cup chocolate chips
- Frosting Ingredients:
- 1 cup unsalted butter, room temperature
- 2 cups smooth peanut butter
- 4 cups powdered sugar
- 1/4 cup + 2 tablespoons milk (I used 2%, but if you have another kind on hand, go ahead and use it)
- Chocolate Dip Ingredients:
- 2 cups chocolate chips

Cake: Bring to boil cocoa, margarine, shortening, and water
- Cake:
- 4 T cocoa
- 1 stick margarine
- 1/2 cup shortening
- 1 cup water
- 2 cups flour
- 2 cups sugar
- 2 eggs
- 1/2 cup milk
- 1 tsp. baking soda
- 1 tsp. vanilla
- Chocolate Icing:
- 4 T cocoa
- 6 T milk
- 1 stick margarine
- 1 box powdered sugar
- 2 tsp. vanilla
- 1/2 cup nuts (optional)
Julia Child's Chocolate Souffle

Chocolate needs special treatment for souffles because it is heavy
- 7 oz or squares of semisweet or sweet baking chocolate
- 1/2 cup strong coffee
- A small saucepan with cover set in a larger pan of almost simmering water
- 1/2 T softened butter
- A 2 to 2 1/2 qt souffle dish or straight-sided baking dish 7 1/2 to 8 inches in diameter
- 1/3 cup all-purpose flour
- A 2 qt saucepan
- A wire whip
- 2 cups milk
- 3 T butter
- 4 egg yolks
- 1 T pure vanilla extract
- 6 egg whites (3/4 cup)
- 1/8 tsp salt
- 1/2 cup sugar
- powdered sugar in a sieve or shaker
- Serving suggestion: 2 cups of sweetened whipped cream, creme anglaise, or vanilla ice cream
