Streusel Apple Raisin Muffins

Topping: In a bowl combine sugar, flour and cinnamon

- 2 cups flour
- 2 tsp baking soda
- 2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/2 tsp each ground cloves and salt
- 1 cup packed brown sugar
- 1 cup unsweetened apple sauce
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 eggs
- 2 tsp vanilla
- 1 1/2 cups diced cored apples
- 1/2 cup raisins
- TOPPING
- 1/4 cup packed brown sugar
- 4 tsp flour
- 1 tsp cinnamon
- 2 tsp vegetable oil
Raspberry Iced Tea

In large heatproof measure or bowl, steep tea in 8 cups boiling water for 4 minutes
- 4 bags black tea-Darjeeling or Orange Pekoe
- 2 cups raspberries (fresh or thawed)
- 1/2 cup sugar
Triple Chocolate Zucchini Muffins

Preheat oven to 350F. Line a 12-Cup Regular Muffin Pan with liners; set aside
- 1 cup finely grated zucchini, measured loosely laid and not packed in the cup (from about 1 medium zucchini)
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt, or to taste
- 1 large egg
- 1/2 cup Silk Dark Chocolate + Walnut Nutchello (Silk Soy, Almond, or Coconutmilk in any flavor may be substituted)
- 2 teaspoons white vinegar
- 1/4 cup canola or vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup boiling water
- 1/2 cup semi-sweet mini chocolate chips
- 12 about 12 teaspoons semi-sweet mini chocolate chips, divided
Bundt Pan Roast Chicken

Preheat oven to 425° and cover the hole of the bundt pan with foil
- 3 cloves garlic
- 2 carrots, chopped
- 1 onion, quartered
- 1/2 lb. yukon gold potatoes, quartered
- 1 large bunch fresh thyme
- 1 large bunch fresh rosemary
- Extra virgin olive oil
- 1 3-4 lb chicken, gizzards removed
- 1 lemon, sliced
- kosher salt
- Freshly ground black pepper
Slow Cooker Lasagna

In a large skillet over medium heat cook the ground beef, onion, and garlic until brown
- 1 pound lean ground beef
- 1 onion, chopped
- 2 teaspoons minced garlic
- 1 (29 ounce) can tomato sauce
- 1 (6 ounce) can tomato paste
- 1 1/2 teaspoons salt
- 1 teaspoon dried oregano
- 1 (12 ounce) package lasagna noodles
- 12 ounces cottage cheese
- 1/2 cup grated Parmesan cheese
- 16 ounces shredded mozzarella cheese
Broccoli Apple Salad

In a large bowl combine broccoli, carrots, red onion, apples, pecans, and dried cranberries
- Creamy dressing ingredients:
- 4 cups fresh broccoli florets, (about 2 medium heads)
- 1/2 cup shredded carrots
- 1/4 cup diced red onion
- 2 large apples, finely chopped (I used gala apples)
- 1/2 cup pecans, coarsely chopped
- 1/2 cup dried cranberries
- 1/2 cup lite mayonnaise
- 1/2 cup low fat greek yogurt
- 2 Tablespoons lemon juice
- 1 Tablespoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Single-Serving Chocolate Brownie

- 1 TBSP whole wheat flour
- 1 TBSP sugar (do not substitute)
- 1 TBSP unsweetened cocoa
- a pinch of baking soda
